Turkish coffee: how to brew and homemade recipes

Fresh and tasty coffee is the first association that arises when thinking about a vigorous and fruitful morning rise. But true coffee lovers know that it is not so much the presence of the drink in breakfast that is important, but the process of its preparation. Simple instant coffee does not provide the same magic as ground coffee prepared under supervision. To brighten up your every morning, we’ll figure out how to properly brew Turkish coffee at home.

Turkish choice

Like any business, brewing coffee requires preliminary preparation. It begins with choosing and purchasing the right vessel - a Turk (also called a cezve). Features of its appearance:

  • narrowed neck, thanks to which the grounds settle and the aroma is preserved;
  • wide bottom, allowing the contents to be heated evenly;
  • long wooden handle for easy carrying.

When choosing a Turk, you should pay attention to the material from which the vessel is made. It must have thick walls and have good thermal conductivity. You can find Turks in different price ranges. Not all of them are of good quality, but every coffee lover can find one that suits them. The following types are distinguished:

  1. Stainless steel. Its advantages are low cost, strength and cooking without releasing harmful substances. Cons: it heats up faster, the coffee heats unevenly.
  2. Aluminum. A possible alternative to stainless steel due to its price and wear resistance. However, you should not use it, since the process is accompanied by a reaction with any products. This can only harm your health.
  3. Ceramic. This is an excellent option for brewing coffee, but ceramic pots are short-lived because the material is very fragile.
  4. Copper. An ideal solution in terms of price and quality ratio. The key characteristics of such Turks allow you to cook the drink evenly without bringing it to a boil. It also has a nice appearance.
  5. Clay. The main disadvantage is that the walls are saturated with the taste and aroma of the beans, so you should not brew different types of coffee in such a vessel.
  6. Silver. They do an excellent job, but they are much more expensive and require regular cleaning to maintain their original condition.

What is an electric Turk?

The principle of the electric cezve is similar to that used in electric kettles. There is a round stand with a moisture-proof pad on top of the heating elements. The stand is connected to the power supply using a power cord, and a brewing flask (Turk) with a capacity of 300-800 ml is installed on top, in which coffee is prepared. This is the simplest device, it can be supplemented with useful devices:

  • removable handle – simplifies washing of the flask, and also allows you to store the electric Turk more compactly;
  • touch control panel - with its help it is convenient to adjust the heating temperature, set a timer, etc.;
  • indicators of water level and temperature of its heating - especially useful in large-capacity flasks;
  • auto-shutdown – makes it possible not to stand at the cezve, since it will turn off on its own after heating the drink to 95°C;
  • switch - they turn off the device without pulling the plug out of the socket every time.

The flask has an outer and inner surface made of various materials. The outer part can be enameled or plastic. The internal one is most often made of aluminum, but ceramic models can also be found on sale - their cost is usually noticeably higher than their aluminum counterparts.

The most practical and durable solution is a stainless steel electric turk, since it is light in weight, lasts a long time and is affordable. When choosing a device based on power, you should assume that the lowest recommended value is 750 W.

In terms of appearance, preference is given to classic flasks - with a narrow neck and a wide bottom, since the aroma evaporates from such a Turk more slowly.

How to brew delicious Turkish coffee - the influence of grain and grinding

The taste of the finished drink directly depends on the choice of coffee beans. It all depends only on the buyer’s desire: how soft, thick, aromatic the coffee should be. Criterias of choice:

  1. Roasting degree. The more you roast the beans, the stronger the coffee will be.
  2. Grinding Can be coarse, medium, fine or ultra-fine grind. The last two options are ideal for the cezve. The smaller the grind, the thicker the drink will be.
  3. Variety There are two varieties on the market – Arabica and Robusta. Arabica has a softer and more subtle aroma. Robusta has more caffeine and strength.

If possible, it is advisable to choose whole grains. It’s better to roast and grind it yourself using an electric or manual coffee grinder based on your own preferences. This will give you a better idea of what you like in your beans.

Ground coffee should be stored in closed (vacuum) packaging to limit exposure to oxygen. Ground grains should be used within three days. It is better to stock up only for one-time preparation of Turkish coffee.

How to choose

When choosing an electric pot for brewing coffee, you should adhere to the following recommendations:

  1. It is better to decide in advance on the volume of water. It can vary from 250 to 500 ml. The choice depends on the expected number of people. A bowl with a minimum volume is enough for two. It is preferable to place half-liter cezves in the office.
  2. It would be a good idea to think about power in advance. The cooking time depends on it. In terms of the ratio of taste and speed, the optimal option is 750 W.
  3. In the store you should carefully examine the handle. It is better if it is made of wood. This pen looks presentable and has excellent performance properties.

Step-by-step method for making Turkish coffee

The classic way to brew Turkish coffee at home includes six steps:

  1. Preheat the ground grains in a Turk to allow them to open.
  2. Pour cold water based on the proportion: 100 ml of drink per teaspoon. It's better not to overdo it, otherwise it will turn out strong.
  3. Add sugar, cinnamon and other ingredients if desired.
  4. Brew over low heat until foam appears and rises.
  5. Before pouring, you need to let the thickening settle. You can make a few knocks on the table.
  6. Serve the finished drink in a preheated cup.

Brew coffee on an electric stove for about 10-15 minutes. You can cook faster with gas.

Tips for using electric Turks

To increase the life of the equipment, as well as create safe conditions, you must follow several rules:

  1. When drinking coffee, do not stir coffee with spoons or other metal objects.
  2. Install the equipment only on level surfaces.
  3. Pour water into the Turk before turning it on and do not stir the drink while it is boiling.
  4. Do not use the appliance in stoves or microwave ovens.
  5. Before cleaning or storing, unplug the device.
  6. Do not cool with cold water.

Important!

Electric Turks do not require additional costs, because they do not have filters that require replacement.

Proper and regular maintenance will help increase the service life of your equipment. After preparing the drink, the Turk needs time to cool. The outside can be wiped with soft cloths, and coffee residues and traces of scale can be removed from the inside using non-abrasive products. Always dry appliances thoroughly after washing.

Basic Rules

To prepare a delicious coffee drink at home, you must follow several rules:

  • You need to constantly monitor the coffee while it is brewing to prevent it from boiling. Otherwise the foam will disappear.
  • It is better that the water level does not reach the narrow neck. As soon as the drink comes into contact with air, the nutrients will begin to evaporate.
  • The drink reaches its readiness when the foam rises. This process must be repeated three times.

It’s also worth knowing: the longer you brew coffee beans, the more delicious it will be in the end.

Useful tips

Coffee of choice

A tasty drink can only be obtained if high-quality coffee beans are used. There are two main varieties: Robusta and Arabica. Robusta has a stronger and bitter taste. There is much more caffeine here than in Arabica. There is also a classification of coffee according to its quality:

  • premium class;
  • top grade;
  • first grade;
  • second grade.

If you purchase a ready-made ground product, pay attention to the packaging. It must be taken into account that the taste and aroma of the final drink is affected by how tightly the packaging is sealed. Proper packaging consists of three-layer foil and a special valve.

By grinding grains

The taste of the drink depends on the grinding of the grains
. When choosing a ground product, you need to know the main types of grain grinding:

  1. Coarse grind. It is used mainly for coffee machines, coffee makers, and sometimes for preparing Turkish drinks.
  2. Medium grind. A classic option that is suitable for absolutely any cooking method.
  3. Fine grind. It is often used for coffee makers that contain filters. With the right recipe, it makes an excellent drink brewed in a Turk.
  4. Ultra-fine grind. Oriental coffee is brewed from it.

Important! When grinding grains yourself, you should not rush. The more thoroughly the grains are ground, the more delicate and uniform the texture of the powder will be.

By temperature and cooking time

Every true connoisseur of this wonderful drink has his own recipes, proven over the years. But the basic rules remain the same:

  1. The Turk must be preheated. You don’t need to keep it on the stove for a long time, just warm it up a little.
  2. Next, add all the ingredients and fill with cold water. The water should not reach the very edges of the turk.
  3. The Turk is kept on the stove until the liquid begins to boil. Under no circumstances should coffee be boiled!

Whatever recipe you use for making coffee, the correct choice of Turk and the process of brewing the drink itself are of great importance. Knowing how to properly prepare coffee on an electric stove, you can create real masterpieces with a unique aroma and incomparable taste.

How to cook in a ceramic pot

We will not consider the recipe for coffee in a ceramic pot at home step by step. The drink is brewed as in other types of vessels. However, you need to know several features of this material in order to make delicious bean coffee.

You can cook with such a Turk under any home conditions. You can brew coffee on a gas or electric stove, or in the microwave. However, it cannot be used for induction cookers.

Avoid sudden temperature changes in the ceramic pot. Do not place a cold vessel on hot surfaces. You need to heat it up step by step, over a fire.

Ceramics are resistant to heat, but very fragile. You need to make coffee in it carefully and avoid shock loads.

Turkish coffee recipes

There are several methods for brewing Turkish coffee that help the beans open up better and make the drink more interesting and aromatic. It all depends on your own preferences and available time. You can brew coffee by adding different bulk ingredients, changing the brewing process step by step. You can always find out and discover the best option online.

But invariably, the most popular options for how to properly brew Turkish coffee at home remain:

  • In Turkish;
  • In Arabic;
  • Viennese;
  • In Warsaw style;
  • In Brazilian.

Rules for a tasty drink when brewing by hand

Although the Turk seems like a simple item, there are several secrets on how to prepare a real oriental drink:

  • Only soft spring water is used so that the taste of the grains does not deteriorate or become distorted.
  • The beans are crushed as much as possible - into dust, so that the coffee turns out thick and aromatic. Small particles release the essential oils contained in the grains faster.
  • Sugar is added along with tea leaves and spices.

You should drink Turkish coffee after a glass of water, as the drink is strong and can cause dehydration if consumed frequently.

Turkish

Where, if not in Turkey, can you find the best drink made with coffee beans? This is the ideal brewing method for those who love strong and thick coffee. Moreover, its strength should not be underestimated: not everyone knows how to drink it even from a serving cup; you should forget about half-liter everyday containers.

It’s not difficult to learn how to brew Turkish coffee correctly and tasty; you just need to understand the brewing features step by step. To prepare it, only very finely ground natural bean coffee is suitable. Due to this, the drink is brewed very thick with the formation of a fluffy foam.

You need to brew as follows:

  • Boil 50 ml of water over a fire and cool to 40 degrees;
  • add ground grains and cardamom (sugar to taste), mix;
  • put on the stove and wait for the drink to brew (you need foam);
  • quickly remove from heat, transfer the resulting foam into a cup and put it back to warm;
  • do this 2-6 more times;
  • leave the Turk for three minutes, then pour into a bowl with the finished foam.

Rating of models without auto shut-off

What models can be found in domestic electronics supermarkets:

  • Electric Turk Gorenje. The power of the device is 800 W, which prevents the water from boiling quickly, so the coffee powder is better extracted. The walls inside are made of stainless steel, and the top is made of plastic - this allows you to reduce the temperature of the body during cooking. The volume of the cezve is 300 ml and is designed for 3 servings of coffee.
  • Endever Costa 800 W, 300 ml. The body is made entirely of stainless steel, so it is not recommended to touch it during cooking. It boils quickly, so the coffee turns out watery. It is necessary to observe the grinding and turn on the device several times.
  • Centek is a model without a button, but cheap. The coffee begins to brew when the cezve is placed on the base; it cannot be left on the stand, as the device will burn without liquid. The power is 1,000 W, which is absolutely unnecessary because the water boils too quickly. Plus - steel body.
  • Kelli is one of the cheapest models in a plastic case. The handle, unlike other Turks, is not removable or foldable, so it needs a separate place in the kitchen so as not to accidentally catch the cezve while making coffee.
  • Sinbo is suitable for those people who need to quickly brew coffee, since the device has a power of 1,000 W and boils water in just over a minute. The case is made of plastic and is therefore susceptible to mechanical damage. Of all the known electric Turks, this is the fastest.

Of the options considered, the most optimal in terms of price and quality is the Gorenje brand electric Turk.

The devices can be used for different purposes. Almost everything is made in China, using poor quality plastic that stinks for days and transfers the “aroma” into the drinks.

If you know what real Turkish coffee tastes like, then it is better not to buy high-power coffee makers - the comparison will not be in favor of electric devices.

Arab

Making Turkish coffee as in Arabic traditions is also not difficult. Arabs are sensitive to the process of brewing natural coffee. The basis is the correct grains, which are sorted out independently, leaving only the best, and ground to powder.

The step-by-step preparation method is as follows:

  • Fry sugar in a cezve until it reaches a golden hue (a kind of caramel);
  • Add 75 ml cold water;
  • Mix everything and bring to a boil;
  • Mix coffee and cardamom in a ratio of 1:0.3, add to the liquid;
  • Brew until the foam rises, remove from heat and transfer it to a bowl;
  • Repeat three times.

After making coffee, remove the Turk from the heat and pour the hot drink into cups, add a pinch of cinnamon on top.

Brazilian

Let's move on to the method of brewing Turkish coffee in Brazilian style. Before moving on to the step-by-step recipe, you need to prepare two essential ingredients:

  • dark chocolate (you can make coffee with cocoa);
  • whipped cream;
  • rum

To brew one cup of coffee, follow these steps. Mix 125 ml of cold water with cocoa and sugar. Stir, then add a tablespoon of coffee. Place the resulting mixture in a pot on the stove and heat until the foam rises. Strain the finished drink so as not to leave any sediment, and pour into a cup. Add rum and whipped cream (or ice cream).

To make coffee with rum, you can only follow the entire brewing process step by step without the last step. Rum is added simply for taste; all other properties of the coffee elixir will remain unchanged.

Viennese (whipped cream)

To make Turkish coffee like in Austria, you will need:

  • ground grains, initially roasted until brown;
  • orange zest;
  • cinnamon;
  • 50 gr. cream, whipped until thick.

We perform the following steps step by step:

  1. Start brewing coffee in a Turk according to any recipe you like (at a ratio of 2 tsp per 200 ml).
  2. Pour into a cup and add whipped cream, sugar if desired;
  3. Add zest and cinnamon on top. Additionally, you can decorate with whatever comes to mind - chocolate, dragees, nuts.

Varshavsky

There are two variations of the Warsaw style coffee preparation method. The peculiarity of the recipe is the addition of an additional natural ingredient - baked milk.

Let's look step by step at how to make Turkish coffee with baked milk and with milk, and compare their taste.

For the first recipe you will need:

  • Heat the milk in the Turk, avoiding the formation of foam;
  • add 2 tbsp. tablespoons of ground coffee beans, a whole spoon of regular sugar and 1/3 of vanilla;
  • put on low heat and wait until foam forms;
  • remove from the stove and repeat the process three times;
  • Pour into a wide cup and decorate with chocolate chips.

The option of cooking with milk at the first stage involves the classic method of cooking with water in a ratio of 100 ml to 2 teaspoons. Strain the resulting liquid. At the second stage, you need to prepare baked milk: heat until it starts to boil. Mix hot milk and coffee drink in a warm cup.

Delicious recipes

In addition to the classic options on the Internet, you can easily find options for adding ingredients that can be found in almost every apartment;

  1. With garlic. The cooking process is identical to the Turkish method, but first you need to add a quarter of a clove of garlic.
  2. With honey. Initially, dissolve honey in warm water in a ratio of 1 teaspoon per 100 ml. Prepare Turkish coffee using the resulting mixture.
  3. With cinnamon/cardamom. Pour spices and ground coffee into a pot and heat. Then add water and cook according to the classic recipe.
  4. With caramel. Heat 15 g of sugar in a pot, shaking occasionally. When caramel syrup forms, add water and add coffee, stir. Cook it the same way, Turkish style.

To start the morning tasty and energetic, all you need is a Turkish coffee pot, natural coffee and a little time. Just ten minutes and you will feel that store-bought instant powder cannot compare to properly brewed coffee.
