The cocktail is quite young by bar standards, so the story of its creation is known from reliable sources, which is rare for other classic cocktails. It belongs to the skillful hands of Joseph Sheridan, who worked as a bartender at the airport in the town of Foynes, in County Limerick in the southwest of my beloved Ireland. - 10-15 ml Riga balsam;

- 1 raw chicken egg yolk;
- fresh chopped lemon zest.
Cooking method:
- Grind the yolk with sugar and Riga balsam to obtain a smooth mixture.

Here I will describe a whole ritual, the violation of which has a very critical effect on the taste of the cocktail. While working in a coffee shop, I learned to perfectly prepare only the “dark” version of Irish coffee, which we called “commercial.” Fortunately, before leaving, a more expensive version of the cocktail appeared on the menu, which was prepared according to the classic recipe. Classic Irish Coffee
- 40 ml Irish whiskey;
- 90 ml freshly prepared coffee (French press);
- 30 ml of fresh cream (preferably more than 30% fat);

Here I would recommend heating the whiskey with a cappuccino maker so that it warms up and the sugar dissolves in it, but you don’t have to do this - high-quality whiskey will flare up on its own. Unfortunately, the photographs do not show the stage of burning the whiskey (below you will find a video with the complete stage of preparing the classic Irish), so you will have to tell it in words. Light the mixture of whiskey and sugar and stir everything with a bar spoon until there is no sugar left at the bottom. It is better to lift it with a spoon to the edges of the glass so that the sugar caramelizes there.
- Put out the flame, cover the glass with a fire, and add coffee (one French press is enough to prepare 2 servings of cocktail).
- Whip the cream in a shaker with ice (you can whisk chilled cream in a bowl) - the main thing here is not to overdo it, since the cream can curdle from rapid cooling, but it should be moderately cold, without lumps. In general, for a serving of cream, use 3-4 ice cubes and literally a few seconds of whipping - you will have to practice here. Then, using a bar spoon, carefully place the cream on top of the coffee and whiskey so that it lies in an even layer and does not fall through (they do not fall through due to the temperature difference, not density).
You should drink the Irish coffee cocktail without stirring, in large sips, so that the cream immediately overcomes the alcoholicity of the whiskey. This preparation recipe is used in barista competitions held by the Specialty Coffee Association of Europe (SCAE) in the “Coffee and Alcohol” category. What else can I add? Oh yes, whiskey, it must be Irish - this is very important. The simple Jameson is used, other brands are also available, but Jameson is easy to buy and not expensive.
As for commercial Irish coffee, everything is simple: instead of a French press, regular espresso diluted with water is used, and whipped cream from a can, which gives the drink a more presentable look for ladies.
