Coffee House - brand history

Coffee House is one of the largest coffee chains in Russia and Ukraine, as well as a coffee production company.

The founder of the coffee chain was Russian entrepreneur Timur Khairutdinov. According to information provided by the coffee house itself, the idea of ​​​​creating a “Coffee House” was born in one of the famous coffee houses in Milan, and the first bartenders from Russia learned the art of brewing coffee in Italy from the leading barista Giuseppe Grasse. After the return of already trained young people, in the fall of September 29, 1999, the first coffee shop was opened in Moscow. Its location was the Actor Gallery shopping center. By 2001, there were already 5 such establishments in Moscow. In May 2001, V. E. Dudakov became the general director (later president) of the company. Dudakov received an economics education in the USA and has ten years of experience working at McDonald's. The demand for coffee shops was supported by serious investments, as a result of which within 3 years Coffee House became the largest coffee chain in the country, increasing the number of its addresses by 10 times. On December 19, 2003, Coffee House opened in St. Petersburg at number 13 on Bolshaya Konyushennaya. By 2006, about 30 coffee shops had already been opened in St. Petersburg, after which the management decided to create its own production workshop for the production of confectionery (and other) products. Over time, Coffee House has grown, and now the number of its establishments numbers more than 200 in various cities of Russia and neighboring countries. The company opened its coffee shops in Moscow, St. Petersburg, Novosibirsk, Yekaterinburg, Kazan and Ukrainian Kyiv.

Since 2004, the company has been developing Japanese restaurants “Asia Cafe”; In 2006, a project for a network of Russian cuisine cafes, “Vinaigret Cafe,” was developed.

In 2007, Coffee House tried to introduce self-service in a number of restaurants, trying to compete with the Starbucks chain that had then appeared on the Russian market. Dudakov. Expobank issued a loan to the Coffee House chain secured by the company's shares. In 2008, these shares were transferred to the British bank Barclays.

On August 23, 2013, a scandal erupted in Ukraine related to the Coffee House policy. In accordance with the standards of the coffee shop chain, in this country employees are required to communicate with customers in Russian. In addition, in one of the chain’s establishments in Kyiv, a waiter mocked the fact that a client was communicating in Ukrainian. The director of the establishment where the incident occurred did not come to the meeting that day with journalists and the client, to whom she was going to apologize for what happened. In the second half of September 2013, it became known that Coffee House in Kyiv abandoned the practice of using exclusively Russian in its establishments. This is stated in the letter-response of the head of the Kyiv State City Administration Alexander Popov to the appeal of People's Deputy Vyacheslav Kirilenko. The chain later issued new rules stating that the waiter must communicate with the guest in his language.

At the beginning of 2014, negotiations began on the sale of part of the coffee shop chain to its main competitor, but by the end of the summer of 2014 it became known about the complete sale of the chain, including franchise coffee shops. The deal to transfer the coffee houses to Coffee House Shokoladnitsa was completed on October 6, 2014. The new owner of the coffee shops does not plan to close them, but some unprofitable and uninteresting establishments will be repurposed as Burger King or Wabi Sabi.

In 2015, on December 1, the first legendary coffee shop in the history of its existence, “Coffee House,” located in the “Actor Gallery” shopping center on Tverskaya, closed.

Raw materials and production

For Hausbrandt coffee, the company purchases green beans, mainly from African plantations, as well as from Brazil, Central America, Jamaica and others. Arabica and Robusta beans are used.

Production is almost completely automated. In an area of ​​10 centimeters, a batch of beans is checked more than 30 times with special photocells that recognize and select immature, hard, deformed and similar unsuccessful beans.
