Coffee is prepared using the following basic methods: pressure brewing, immersion and steeping brewing, filtration and dripping brewing, and poaching brewing.
How does an Aeropress work?
An Aeropress is a device for preparing coffee using pressure, just like an espresso machine and a geyser coffee maker.
This is an innovative coffee machine that has many fans around the world.
The Aeropress was invented by Alan Adler , a famous inventor and former instructional engineer at Stanford University. AeroPress, Inc., a company he founded in 1984. manufactures and markets his revolutionary sporting goods inventions, including the Aerobie Pro flying hoop, which holds the Guinness World Record for the longest throw.
Alan Adler, inventor of the Aeropress
He holds more than 40 patents and has developed measurement systems for military aircraft, nuclear reactors and submarines, a paraboloid lens for telescopes and dozens of flutes in addition to his boats, the Aerobie sports toys and the AeroPress coffee maker.
In 2004, Alan began studying the coffee brewing process and analyzing the design of coffee makers in order to create a truly innovative device that could produce an excellent cup of coffee without bitterness. At the coffee industry trade show in November 2005, the company introduced its revolutionary AeroPress coffee maker.
The AeroPress looks more like a science project than a coffee maker.
According to experts, the right water temperature, the right level of air pressure and the right grind size can give you great coffee in minutes.
The duration of the coffee preparation process is very important. Other methods take longer. Because of this, more bitterness gets into the coffee. If you shorten the time, you can reduce the degree of bitterness, the inventor realized and decided to use pressure.
In August 2009, the company switched to crystal clear BPA-free copolyester to provide customers with a harmless material. Now it is also made from polypropylene.
Aeropress manufacturing materials
How does the Aeropress work?
The AeroPress consists of a plastic tube with a piston mechanism, namely: a cylindrical body, a piston, a filter cover, a filter holder, a stick for stirring the drink, a spoon, filters in a set of 350 pieces, and a cone-shaped funnel-watering can.
When you press the piston, water under pressure seeps through the layer of ground coffee, flowing into the drink container.
Before this, the company released eight versions of the AeroPress.
And at the beginning of 2022, at the coffee exhibition in Boston, Aeropress Inc. presented its new development - Aeropress Go.
This is a more compact device, convenient for hiking and traveling. Its dimensions are 12cmX9cmX9cm, compared to 14cmX11cmX10cm for the regular AeroPress. But it works on the same principle. The new Aeropress Go was released for sale at the end of October 2019.
Aeropress components
Where to buy an AeroPress and how much does it cost?
The original AeroPress is produced by only one company, Aerobie Inc, which is located in the USA. Its products are marked accordingly, and the AeroPress name itself is a registered trademark. You will see it as a brand name on individual parts of the device - on the cylinder and stirrer, as well as on the packaging bag in which the device is supplied.
You can buy the Aerobie Aeropress in Russia via the Internet, in specialized coffee accessories stores. Price – from 3.5 to 4 thousand rubles.
To use the AeroPress you will need disposable filters. Each subsequent batch will cost from 450 to 550 rubles for 350 pieces.
If you are not satisfied with the cost of the original device, you can find copies in Chinese stores such as Aliexpress. The cost of an AeroPress is lower there - about 2,400 rubles. Delivery is often free. The quality and environmental friendliness of the AeroPress materials in this case are questionable.
How to brew coffee in an AeroPress
The method of making coffee in an AeroPress consists of 9 simple steps:
Step one:
Pull the piston out of the body (flask) of the AeroPress.
Step two:
Insert the filter into the device cover. This is a plastic lid with holes.
Step three:
Screw the filter cap into the housing.
Step four:
Place the body on the mug and put one spoon of finely ground coffee into it.
Step five:
Shake to even out the coffee.
Step six:
Add water to the first level in the housing. 175°F (80°C) water for hot brew or room temperature water for cold brew.
Step seven:
Stir for about 10 seconds for hot brew or 1 minute for cold brew.
Step eight:
Insert the plunger and press gently, pausing when you feel resistance, until the plunger reaches the layer of coffee.
Step nine:
Remove the filter cover, press the plunger to release the used coffee and wash the device.
As a result, you will get coffee close to espresso.
And to get:
- Americano, add water until the mug is full (237 ml).
- Latte, add milk until the mug is full (237 ml).
- Iced coffee, add ice water to make a full (237 ml) mug of coffee.
drops of coffee through an Aeropress filter
Enjoy your coffee!
And remember that there is always room for experimentation - try different grains, change the grind size or water temperature. AeroPress, like Vietnamese coffee, can be prepared over ice, so you get an aromatic and refreshing drink. Try an alternative Aeropress Coffee recipe. Read about other brewing methods in our articles.
Life hack: The AeroPress is very easy to clean - remove the black cover, press the piston all the way and throw out the “pill”.
Reverse method
Using this device you can prepare coffee in the reverse way.
- Install the piston into the cylinder so that the rubber gasket fits tightly and completely, but do not push it far.
- Turn the cylinder over, placing it on the piston like a foot.
- Pour in the required amount of coffee and fill it with hot water for pre-brewing. Then add water to the top.
- Stir.
- Place the heated paper filter into the perforated cover and place it on the cylinder.
- Place the AeroPress on a container into which the coffee will flow, with the filter facing down. To do this, you will have to carefully turn the device over.
- Push the plunger down, squeezing the coffee out of the cylinder.
- Everything is ready, you can enjoy your drink.
- The used paper filter is thrown away, all other parts of the device are washed as usual. For cleaning use a sponge, water and non-abrasive cleaning products.
History of the device
The founder of the design is considered to be Stanford University professor Alan Adler. He is the founder of a toy company and previously designed military equipment. His list of inventions includes the Aerobie Pro throwing ring, which can fly over long distances. It is used not only for games, but also for throwing competitions.
One day Alan invited friends over for dinner. A lady attending a party asked for a cup of coffee. The available coffee maker was designed for 6 users, and none of the guests wanted to drink a strong drink in the evening. The piquant situation put the inventor in an awkward position, and he was inspired by the idea of creating an individual device for preparing aromatic drinks.
The experiments were carried out for a long time. The process of washing crushed coffee beans with hot water was at the forefront. The first device was released in 2004 and was called AeroPress. It went into mass production already in 2005. Over the course of a year, Alan brought the device to perfection.
The accessory was highly appreciated by lovers of aromatic strong drinks. Moreover, you can use the best grains for cooking, which retain their unique taste and aroma during such heat treatment. The product is very popular in different countries, but the lion's share is sold in Scandinavia. The devices are in high demand among coffee lovers due to the price-quality ratio, ease of use, compactness, versatility (can be used at home, taken to work and a picnic, to the country house and on business trips), the ability to experiment with proportions and water temperature and the lack of grounds in drinking containers.
Advantages of using AeroPress
The manufacturer also names nine reasons for the advantages of using AeroPress:

World Aeropress Championships
Currently, World Aeropress Championships are held every year.
Coffee industry leaders Tim Wendelboe and Tim Varney liked how the AeroPress allows users to control the brewing process. In 2008, they decided to hold a casual competition between three device enthusiasts to see who could make the best cup of coffee using the AeroPress. They called their event, apparently as a joke, the World AeroPress Championship. Then fans in other countries decided to organize national championships, and the national winners began to compete in the world championships. Over the years, the championship has spread to dozens of countries. In 2022, national competitions were held in 65 different countries, culminating in the 12th annual Aeropress World Championships in London.
Wendelien van Bunnik from the Netherlands was declared the winner of the Aeropress World Championship 2022. The 2018 World Championship was won by Carolina Ibarra Garay from the USA. In 2022, the World Cup winner's cup was won by Paulina Miczka from England.

Recipe and method for making coffee in an AeroPress
Below is the recipe and method for making coffee in an AeroPress from last year's winner:
Coffee: 30 g.
Grind: 7/10 (1 = very fine, 10 = very coarse)
Water: 100 g water (30 ppm) at 92 °C (197.6 °F)
Method: reverse
Filter: Aesir Filter (washed)
Total cooking time: 60 seconds
Cooking method:
- Pour 100 g of water into coffee in 10 seconds.
- Mix thoroughly 20 times in 10 seconds.
- Place the filter cap with the washed filter on the AeroPress and carefully force out the excess air.
- After 40 seconds, turn the AeroPress over and squeeze out all the coffee. You should get approximately 60g of extracted coffee.
- Add 100g water to the extracted coffee.
- Taste and add more water to desired strength (it ended up being diluted to 120g)
- Cool the drink to approximately 60 °C (140 °F) while stirring and straining.
cups of coffee with different coffees
What factors influence the taste of AeroPress coffee?
As blogger Yuri Shchekin writes, “if you study the recipes for making coffee at the championships, you can identify various trends. At one time it was popular to brew coffee with water at a fairly low temperature (65-75°C). Recently, it has become popular to make “concentrates” and then dilute them with water. This became a global trend after Filip Kucharczyk won the Aeropress World Championship 2016.”
His recipe is as follows:
Inverted method, 35 g coffee. The grind is coarse. 150 ml water. Temperature 84°C. Paper filter.
Pour coffee into the AeroPress, then add 150 ml of water in 15 seconds. Stir for 20 seconds, put on a filter holder with a filter and wait until the brewing time reaches 1 minute. Turn the Aeropress over and press for 30 seconds. Total time 1:30. 100-120 ml of water must be added to the resulting concentrate.
different grind coffee
Grinding degree
The manufacturer of the device offers a fine grind for the AeroPress. And the barista is average, as for a pour-over.
In their opinion, the Aeropress provides a wider field for experimentation with grinding compared to other methods, since it is more responsive to changes. They recommend adjusting the grind for different types of coffee depending on taste.
Aeropress produces the most interesting and tastiest varieties with a dense body and bright fruity acidity. Washed processing for cooking in an AeroPress is preferable: under pressure, the enzyme characteristic of natural processing often begins to dominate the taste, “contaminating” it, they say. Therefore, Kenyan and Indonesian coffees are more suitable.

Coffee dosage
The optimal amount of coffee for an AeroPress is 18 grams. Unlike other preparation methods, the AeroPress uses more coffee in relation to water: about 70 grams per 1 liter. But this does not mean that you should always use exactly that much coffee. We recommend treating this as a guide and adjusting the proportions based on taste.
It is recommended to brew freshly ground Arabica, especially expensive single varieties. The preparation method reveals the taste and aroma of coffee well. The AeroPress is suitable for coffee beans of any roast level. Both smaller than medium (but not thin) and larger are acceptable. The taste of coffee brewed in an AeroPress, a mixture of Arabica and Robusta, is not for everyone. The drink is somewhat stronger, but has a refined and more bitter taste. The maximum permissible content of robusta in the mixture is 10%.
aeropress
Water temperature
Usually the rule is: the darker the roast, the cooler the water. And also depending on the brewing time, the shorter the brewing time, the higher the brewing temperature should be selected. At the same time, the inventor of the AeroPress recommends using water at a temperature of 80°C. However, few people follow this recommendation and the optimal temperature for making coffee in an AeroPress is considered to be 90°C.
The temperature should not exceed 96 degrees Celsius. To get this temperature, you need to boil water and then cool it for one and a half minutes with the lid open. To control the temperature, you can use a kettle with a water temperature indicator.
Only bottled water with a mineralization level of 75 to 250 mg/liter is suitable for brewing coffee in an AeroPress. And the baristas argue about the temperature of the water.
Many competition winners recommend water temperatures between 75 and 79 degrees. For AeroPress enthusiasts, however, it is common practice to use lower temperatures. This enhances the sweetness. Bitterness is lower. But the disadvantages include the fact that acidity is partially lost and extraction becomes less effective.
Diluting with water is not exactly an unusual practice in the coffee world.
If you think about it, this is what happens when making an Americano or latte. However, this method is not used in active methods. This prevents over-extraction, reduces bitterness, and allows you to increase the limited volume of drinks. However, it is considered wasteful and ineffective.
varieties of coffee of different degrees of roasting
Bloom
The flowering process, that is, blooming, is very important when working with freshly roasted grain. The idea is that during the first infusion, you add a small amount of water: just enough to cover the ground coffee and thereby help the bean rid itself of excess carbon dioxide before the brewing process begins. Typically, water is required in a ratio of 2 to 1 to the amount of ground coffee. You then wait 25 to 45 seconds, allowing the beans to release carbon dioxide and begin the brewing process. This aids extraction and promotes more subtle flavors. However, it takes some time.
Coffee prepared using the AeroPress method is very bright and rich. The full potential of the grain is revealed. The main difficulty is not to over-extract. It is very important to choose the right grinding and mixing intensity.
Advantages and disadvantages of the unit
AeroPress, like any other man-made device, has both positive and negative properties. A review of reviews shows that there are more positive characteristics in this product than negative ones. The main poles include:
- Small dimensions. Users are attracted by the mobility of products. It fits into any backpack or bag. You can enjoy a hot drink anywhere: in a park or square, on a city street or in a forest.
- Insignificant own weight. Easy to transport to your destination. Can be held with one hand without significant physical effort. Suitable for use by both adults and the younger generation.
- Brewing speed. The whole procedure takes no more than two minutes.
- Optimal extraction. Coffee prepared in such a device has unique taste characteristics and exudes an amazing aroma.
- Elementary use. Anyone can master the preparation of their favorite drink in such a unit. As for care, it is simple and does not cause any particular difficulties.
- Possibility of monitoring actions. You can experiment when preparing to get the best result. It will not be difficult to choose the degree of grinding and the pressure when squeezing out the liquid. You can approach the process creatively. It all depends on personal preference.
- Reliability of the device. When making the product, manufacturers use durable and thick plastic. It is not afraid of mechanical damage and will not break or break if dropped. Quality is determined by the absence of hidden and complex elements, which increases the reliability indicator.
There are few disadvantages, but they are worth mentioning:
- the price for the device is too high;
- the need for constant purchase of consumables, for example, disposable paper bags.
Cold brew using AeroPress
When preparing cold brew, water and ground coffee usually react for 12-36 hours. This gives the ground grain enough time to thoroughly soak in water. This makes cold brew very difficult to filter. If you try this with the V60, the filter will clog almost immediately.
And this is where the Aeropress comes to your aid. Using air pressure, filtering your cold brew will be quite simple, and in no time you will have your wonderful, balanced, cold brew.
Recipe
- Mix 35 g in a bottle. coffee and 500 gr. water.
- Leave for 5-10 hours at room temperature.
- Place in the refrigerator overnight.
- Filter the coffee grounds using an Aeropress, using the direct method. (Depending on your preference, you can use a paper or metal filter).
- Add ice. (Rinse the AeroPress and repeat with the remaining cold brew).
microfilter
ESSENTIAL PAPER FILTER
One of the cool things about the AeroPress is the ability to change and customize a lot of little things.
For example, there are a certain number of companies that produce special filters for AeroPress from different metals.
Some also like to experiment with using two paper filters instead of one for a cleaner taste. But in fact, all WAC winners preferred one, traditional paper filter.
From the position of a barista, it is difficult to come to a clear decision.
The first two winners used the inverted method, followed by four wins in a row using the traditional straight method, and finally the last three victories were also won using the inverted method.
5 out of 9 winners used the inverted method
Cold dreep with Aeropress
Do you like iced coffee, but find cold brew too boring and uninteresting? Then cold drip is what you need! For many years, the main problem was that the equipment for good cold drip was incredibly expensive and bulky.
Recipe
- Place a moistened filter in the lid of the AeroPress flask, secure it to the flask and place it on a large vessel.
- Take 50 gr. Coarsely ground coffee and pour into an AeroPress.
- Place another filter on top of the ground coffee in the flask. This will help ensure an even flow of water.
- Take an empty plastic bottle and cut off the bottom. Pour 600 ml of water into it.
- Unscrew the cap just enough to let a drop of water flow through every second.
- Keep an eye on the fixture. When all the water has dried out, you should have an exquisite cold drip.
Espresso from AeroPress
The connection between espresso and Aeropress is obvious at first glance. Both devices use pressure. But while 9 bar is an integral part of making espresso, the AeroPress's pressure is actually the way we separate our coffee from the coffee grounds. So pressure does not play a key role in extraction here.
With all that said, today you can even make espresso using an AeroPress. The Californian brand Fellow has released a device specially designed for preparing the so-called “aeropresso”. The new thing is called Prismo.
corporate aeropress body
Long brew with Aeropress
The old school AeroPress was always on the side of short brew times. But what if I told you that you can break all the rules and end up with great coffee?
This is called "long brewing" and the process is more like cupping than just brewing with an AeroPress.
Another benefit of this recipe is that you can increase the coffee to water ratio to 1:18. Which means that the same amount of finished drink will use less grain.
Recipe
- Place the Aeropress in an upside-down position and pour 14 grams of freshly ground grain into the flask.
- Slowly pour in 250 grams of water at 93°C.
- Wet the filter and place it in the lid. Secure the lid and leave for four minutes.
- After four minutes, stir five times and let the coffee crust break down. Replace the cover.
- Time it for eight minutes. Turn the AeroPress over and slowly lower the plunger.
Tips for AeroPress owners
A coffee expert offers the following tips for AeroPress owners:
- Since the device is made of plastic, it should be periodically soaked in water for a long time to get rid of absorbed odors. After brewing coffee, it is best to store the Aeropress disassembled: the cylinder body, plunger and filter holder.
- If the set does not include stirring sticks, thin sushi sticks are suitable.
- When brewing coffee using the direct method in an AeroPress, the drink may begin to flow out ahead of time. To prevent such a case, insert the piston into the brewing cylinder body by 1 mm. This removes the air pressure and stops the coffee flowing.
- It is convenient to wet a paper filter as follows: place the filter in the filter holder and screw it onto the body. We install the Aeropress as with the direct brewing method and fill the chamber with water to the middle. Use a piston to force water through the filter. The piston does not need to be lowered to the limit; it should not come into contact with the filter. Then unscrew the filter holder. As a result, the paper filter is evenly wetted, which has a beneficial effect on the taste of the drink.
- A metal filter allows for a denser cup. It does not filter out coffee oils. The taste is a little dirtier than using a paper filter. When using both paper and metal filters at the same time, it is better to place the metal filter closer to the coffee tablet.
- Using multiple filters does not always result in a cleaner cup. Because pressure is used, coffee grounds may get into the drink.
- To enhance the aroma of the drink after pressing, you can cover the container with a lid for a few minutes.
In the end, we would like to note that it is better to buy the device from official representatives of AeroPress, Inc. Otherwise, you may stumble upon counterfeits made from harmful types of plastic. The company's website lists official distributors in over sixty countries around the world. Within the CIS, only one Russian company is their exclusive representative.
A list of such companies, as well as instructions for preparing coffee in an AeroPress, can be found on the website at the link: https://aeropress.com/why-aeropress/.

AeroPress Go - a stripped-down version or a complete analogue?
In 2022, a new version of the AeroPress was born - the Aeropress Go coffee maker. This is a smaller “travelling” model, which comes with a 450 ml mug. The latter is also a hard case.

Differences between Aeropress Go and the classic version:
- The full Go kit weighs 328g versus 375g for the classic. And this comes with a cup-cover.
- The cup-case provides both protection for the “coffee maker” and organization of space - everything is put in one place, nothing dangles.
- The maximum volume of water poured into the Go is 200 ml versus 260 ml for the original model. In principle, if you are used to pouring a typical volume of 200 ml for most recipes, or even more so when cooking using the bypass method, then you should have no questions at all about the capacity of the travel version.
- The Go does not have a funnel (not really needed), and the measuring spoon (also, in my opinion, not needed) and the spatula are of a different design, the spatula is foldable.
- The perforation of holes in the filter holder has a different pattern - more radial. Realistically, I just don't care.
- The filter holder has been replaced with a compact, flat plastic case that holds approximately 10 filters. The case itself fits seamlessly into the overall mug-case. The filters themselves are the same, the diameter of the flask is the same for both Aeropresses. And the kit includes the same 350 disposable filters.
Actually, if not for the price - in Russia, at the time of writing this review, Aeropress Go is sold for about 4,000 rubles (in TastyCoffee, in Torrefacto) - I would advise everyone to buy the travel version. Everything is the same, but it’s really more convenient to take it with you. At the same time, use it at home - no restrictions. Unless you wanted to brew the maximum possible volume of 260 ml...
Update from autumn 2022 : the price of AeroPress Go can be said to be equal to the price of the standard version, now the traveling version costs about 3,500 rubles. (see links above), and in the GoodThings24 store it costs 2900 rubles.
The filter holder on the Aeropress Go (left) has a different perforation pattern, but in fact this does not affect anything
Old versions
You need to understand that the Aeropress itself also changed a little and had different designs and materials over the years. Below is my collage and translation based on information from the official American website https://aeropress.com/. I’m not 100% sure about the translation of “copolyester”, if there are experts/linguists/chemists among my readers, I will be glad to receive feedback in the comments.
