In hot weather, especially in southern countries, it is recommended to drink tea, a lot of strong tea. Remember Turkey or any resort towns, where you will always meet traders at the market who offer to refresh yourself and invigorate you from the hot afternoon with a cup of tea. We thought about those who don't really like tea and found a coffee alternative on a sunny day - iced coffee. What kind of drink this is, how to prepare it correctly, and how to drink it, we tell you in this article.

The ABC of taste and freshness

A cooling drink loses almost all its aroma, the most important component of its taste. Our brain “identifies” different tastes by simultaneously receiving signals from receptors in the mouth and nose.

How to make coffee without losing its taste?

Professional coffee makers solve this problem by preferring light roasted beans and choosing the fastest brewing methods (for example, Australian Lungo). Next, the drink is cooled smoothly at room temperature, and only after that is put in the refrigerator.

How to make iced coffee at home? If you don’t have a coffee machine, you should use strong “varieties” of the drink as a basis, since adding ice somewhat “softens” the coffee. Espresso and traditional “Turkish” coffee are best suited. To prepare the latter, ground grains are brought to a boil in a Turk 2-3 times, but do not boil. The sediment remaining after brewing the beans must be decanted.

Subtleties of classification

All the many recipes for chilled coffee are based on two cooking principles:

  • A variety of ingredients are added to a cooled drink brewed in a cezve or coffee maker.
  • Ground beans are not heat-treated, but are infused in cold brew systems or a French press.

The preparation method also determines what the coffee is called:

  • Ice coffee is a cool mix of a traditionally brewed drink with other ingredients - ice cream, spices, syrups, etc. Served with ice.
  • Coffee frappe is a cold cocktail whipped with ice, cream (or milk), requiring an “accompaniment” of the delicate flavors of marshmallows, marshmallows or tiramisu.
  • Cold brew is an independent product of the French press flask and an excellent base for a variety of cold cocktails.

Coffee story

There are legends about the appearance of this natural “energy drink”. The most common of these is associated with the shepherd Kaldim and the events that occurred in Ethiopia in 850. This is how this story sounds according to handwritten sources.

Kaldim drove his herd along picturesque mountain slopes with rich vegetation. Suddenly the shepherd began to notice that, after chewing the leaves of a wild plant, the goats became too vigorous and excited: they began to run, jump furiously, and butt. The young man was frightened and thought that the goats were poisoned, and their inappropriate behavior was a sign of their death throes.

After thinking a little, the shepherd decided to seek advice from the wise monks. He collected several coffee fruits and brought them to the monastery. After listening to the young man’s story, the monks decided that the devil had sent these fruits to earth and they should be burned immediately. The grains were thrown into the fire, and then a rich coffee aroma, hitherto unfamiliar to people, spread throughout the entire monastery.

Judging that such a smell was unlikely to be poison, the beans were quickly pulled out of the fire, crushed and poured with water, thus preparing the world's first coffee drink. The monks liked the black water, and the invigorating properties of the drug helped the ministers tirelessly stay awake during long night services. Later, the popular drink in monastic circles began to be prepared in nearby cities, from where the fame of coffee spread throughout the world.

This is how the legendary legend tells about the appearance of coffee. According to historical information, the Greeks owe the arrival of coffee to the Mediterranean region to the Turks. In Hellas, this drink became widespread precisely during the rule of the Ottoman Empire. The first coffee houses in Greece were Turkish, and their opening dates back to the 16th and 17th centuries. At first, these establishments were visited only by Turks, but gradually representatives of the Greek nation began to be seen here more and more often.

In 1828, with the advent of independence, the first purely Greek coffee shop opened in Nafplion. Here visitors were offered not only to drink a cup of aromatic drink, but also to purchase ground or roasted coffee beans for making homemade Greek coffee. Later, specialized firms and shops appeared in Greece, importing and processing coffee products from different countries. And the drink became more and more popular every year.

Today, Greeks cannot imagine their life without a cup of aromatic coffee. This drink is consumed at every meeting, without paying attention to the time of day or the place of action. Any cafe will offer you several types of coffee drinks, and one of the most popular is the Frappe coffee recipe. This cool cocktail has become one of the symbols of tourist holidays in Greek resorts.

  • In a cezve or coffee maker, brew 150 ml of a drink with a strength acceptable to you. Without cooling, place a cinnamon pod in it.
  • Cool naturally to room temperature.
  • Remove the cinnamon, strain off the sediment and place the drink in the refrigerator for 30 minutes.
  • Meanwhile, whip the cream (35 g in total) and place 4 ice “cubes” in a glass.
  • Pour cooled coffee into a glass.
  • Decorate with whipped cream.
  • Sugar - according to taste.

Before preparing the ice cream, you need to crush the ice. The crumbs should be fairly small as they will be placed on top of the finished drink.

How to do:

  1. Brew espresso and leave it to cool. Once it reaches room temperature, it will need to be placed in the refrigerator to cool it further;
  2. Beat liquid heavy cream with a blender or mixer, adding a little powdered sugar. It is only needed to sweeten the cream a little;
  3. Place ice cream in a glass, pour chocolate syrup on top, and then pour chilled espresso over it;
  4. After this, place whipped cream on top of the drink. Sprinkle crushed ice over cream.

To prepare one serving of this glass, you need a wine glass with a volume of at least 300 ml.

Sweetness to joy

The best way to “beat off” the bitter aftertaste of a coffee drink is to eliminate heat treatment and infuse it in cold water. Iced coffee prepared this way has much lower acidity and a pleasantly sweet taste. The grains for it should be dark and coarsely ground.

  • Pour 150 g of coffee beans into 0.5 liters of cold boiled water, leave for 5-6 hours, and if possible, overnight. After time, strain off the sediment.
  • Place ice crystals in glasses - 3-4 in each; fill with coffee infusion.
  • Garnish with scoops of ice cream.

Frappe - chilled in crushed ice

Although the name of this thick, milky foam-covered cold coffee cocktail with ice cream and fruit syrup was born in France, its recipe is more popular in sunny Greece and Cyprus.

  • Using 200 ml of filtered water and 2-3 tsp. ground beans, brew espresso.
  • Cool smoothly and pour into a blender.
  • Add ¼ cup milk, a few ice crystals; sweeten 2-3 tsp. Sahara.
  • Blend until the ice “melts” into coarse snow, usually about 10 seconds.
  • It's time for additives: it can be vanilla, fruit or chocolate topping. Add them to the already prepared mass and mix again until smooth.
  • Pour into a tall glass, garnish with a swirl of whipped cream, grab a straw and enjoy!

Ice moccaccino

Ice moccacino, aka ice mocha, aka ice mocha (Caffe mocha) is prepared like an iced latte, but with syrup, like a classic mocha, and ice cream. Usually served in a latte glass.

How to make iced mocha

You will need:

  • Two cups of espresso
  • A teaspoon of cocoa powder, chocolate syrup or a couple of pieces of chocolate
  • Two spoons of milk
  • Ice cream (optional)
  1. Pour espresso into a large cup, add chocolate, syrup or cocoa. If you added chocolate chips, stir until the chocolate melts.
  2. Add cold milk and ice and stir.

*All these ingredients can be added to a blender flask and mixed.

If desired, you can decorate with cream and grated chocolate.

Alternative option

You can add a scoop of ice cream without blending.

The first thing that the early name of Thailand is associated with is Siam, a breed of cat whose special color can be described as “coffee au lait.”

Similar colors have found a place in modern Thai cuisine. Its best example is olyeng, or local iced coffee. The ingredients of this cocktail do not mix, which makes it possible to evaluate the specifics of its “color”.

  • Prepare 800 ml of strong coffee in a convenient way. Cool gently.
  • Meanwhile, prepare the cream: in a separate container, mix 2 cups with 2 tsp. chopped cardamom and 3 tbsp. Sahara. Over medium heat, bring the mixture to a boil and turn off the heat. Let it brew for a quarter of an hour under the lid. After the time has passed, add ¼ tsp to the mixture. ground almonds.
  • Now let’s form the layers: fill 4 glasses with small ice cubes, then add a little condensed milk, creamy nut mixture to each and carefully pour the cooled drink on top. Avoid mixing layers.

Cocktail glasses with a “Siamese character” should be very transparent.

Cool aesthetics of Shakerato

If your goal is to refresh yourself and at the same time get the maximum concentration of caffeine, prepare a Shakerato. Double Italian espresso plays a leading role in this variation of iced coffee. Strong, made from heavily roasted grains - it should not be watery or bitter.

  • Place a few ice crystals and 1 tbsp in a shaker. sugar syrup.
  • Pour in the espresso without cooling. When in contact with ice, a hot drink retains its taste characteristics longer.
  • Close the shaker and shake the contents with a few vigorous movements.
  • Vanilla, a few drops of lemon juice or Baileys liqueur are perfect as a fragrant addition. Real gourmets prefer to add Grappa to it, mixing two Italian temperaments.

Shake the shaker again, and when a delicate light foam appears, pour its contents into a cocktail or wine glass, pre-chilled with ice cubes.

Affogato - cold coffee made from espresso and vanilla ice cream

Some versions of affogato contain a shot of bead or other liqueur.

Although some restaurants and cafes in Italy classify affogato as a dessert, outside of Italy affogato is a drink. Berries, honey and other types of ice cream besides vanilla are sometimes added to it.

While the affogato recipe is more or less standard in Italy: a scoop of vanilla gelato with a shot of espresso, there are variations in other European as well as American restaurants.

How to make mint affogato

Everyone loves ice cream. And coffee. And whoever discovered the combination of both products is a real genius!

You will need:

  • Vanilla ice cream 1 scoop
  • Espresso
  • Mint chocolate
  • Mint leaves
  1. Place 2-3 pieces of mint chocolate into a cup.
  2. Gently add a scoop of ice cream.
  3. Pour espresso, garnishing with mint leaves.

Orange freshness

  • Brew 4 glasses of coffee at your usual concentration. Cool at room temperature and put in the refrigerator.
  • Meanwhile, peel 2 oranges and squeeze out the juice.
  • Grind the orange peels and place them in a saucepan. Pour a glass of water and add a little less than a glass of sugar. Boil for 5 minutes. Cool the syrup after removing pieces of zest from it.
  • Mix iced coffee with orange juice and syrup.
  • Pour into tall glasses and top with crushed ice.
  • Garnish citrus iced coffee with an orange slice and a swirl of whipped cream.

Vietnamese iced coffee

  4. Add a few frozen cubes to each glass.

This frappe should be served immediately after preparation.

Their recipe for relief from the heat is based on a mixture of Arabica and Robusta (80% and 20%, respectively), water, food ice, and vanilla syrup. The delicate, subtle bouquet and pronounced sweetness of the latter well masks the bitterness that the presence of robusta gives to the drink.

Useful tips

When preparing cold brew espresso coffee, it is preferable to use finely ground coffee. If the Frappuccino or Frappuccino is prepared using the cold fermentation method, it is better to use a coarse powder.

You can diversify the taste of the finished drink by using different fillers. So, in addition to vanilla or chocolate ice cream, you can try fruit ice cream. True, not everyone will like a frappuccino prepared according to this recipe, but through trial and error you can create your own delicious original recipe. When preparing frappe with alcohol, you can add not only liqueurs, but also use cognac or rum.
