To cheer up in the morning or during a stressful work process, a cup of coffee is enough. But a hot drink, especially in the hot season, is not always a delight. Try iced coffee! A couple of sips are enough to restore your vigor and energy.
However, iced coffee is not only perfectly refreshing, this type of drink is a great way to diversify your taste sensations. But how to prepare iced coffee for maximum enjoyment? There are several methods of preparation, which can be divided into two types: in the first case, the finished hot drink is cooled to the desired temperature, in the second, coffee is prepared by keeping the crushed beans in water (for example, using a French press), and then filtered.
Fredo's recipe
Fredo can be prepared at home without a coffee machine.
The main thing is that you have a composition of ingredients from:
- coffee - 60 ml;
- dairy products - from 50 to 70 ml;
- ice - 4 crushed cubes;
- topping - 15 ml.
Ice cubes and smaller drinks are not placed here. But the similarity with the ice product is great. These drinks have rich flavors. That's why they drink them after meals.
You can take Arabica with Robusta from 20 to 30%, then you will get more caffeine.
How and what to serve?
Fredo coffee is traditionally served in tall glasses or Irish glasses. It is advisable that the container be made of transparent glass in order to see the structure of the mass. Depending on the recipe and technology, the mixture with syrup or liqueur has beautiful transitions and streaks through which pieces of ice are visible. Additionally, a straw for cocktails is served.
The drink can be topped with whipped cream, sprinkled with cinnamon, cocoa powder or chocolate chips. At home, as well as when making Freddo Shakerato, ice is often removed by straining through a bar strainer. This makes the structure homogeneous, but the temperature of the coffee becomes a little higher, so you don’t have to worry about catching a cold.
How to make Fredo coffee
Important! Make drinks with purified water, then they will be tasty and rich.
- Use full fat milk.
- Crush the ice.
- As a topping, take caramel, chocolate or vanilla, but not fruit.
Cooking:
- Pour milk, syrup and ice into the double espresso that you have previously brewed. You should have all this in a shaker type container. Shake until foam appears.
- You can also use additives in the form of: sugar, chocolate chips, whipped cream, liqueur.
Important! If you make milk foam, you get a Fredo Coffee cappuccino.
Preparation technology for the main varieties
There are many variations of the drink, but they are all based on 2 main subtypes - espresso and cappuccino. In the first case, you get cold coffee with syrup, in the second, whipped milk is added. Basic recipes can be modified by adding additional ingredients.
Most often, a Fredo coffee recipe contains the following components:
- espresso;
- milk;
- syrup;
- ice crumbs.
Additionally, flavoring additives are used - cocoa powder, cinnamon, chocolate or coconut chips, vanilla, liqueur.
Basic recommendations for making Fredo coffee:
- Use freshly ground Arabica beans as a base. The content of espresso in the drink is at least half, which gives a strong, bitter taste. If you add robusta, the bitterness will become too pronounced.
- It is advisable to brew coffee in a coffee machine. It is permissible to make a Turk by taking the same amount of ingredients and also straining the resulting liquid before use.
- It is advisable to use milk with reduced fat content. The optimal option is 1.5-1.8%.
- The syrup can be vanilla, chocolate or caramel. Fruits are not added because organic acids will cause the milk to curdle.
- Beat the mixture in a shaker or using an immersion blender. It is also permissible to use a regular glass jar with a tight-fitting lid.
The drink is similar to iced coffee, but the serving is smaller in volume and does not contain ice cubes.

Fredo Espresso Shakerato is made from coffee, sugar and ice shaken in a shaker. Before transferring to a glass, the drink must be strained.

History of coffee in France
The opening of the first Parisian coffee shop took place in 1672, but this does not mean that it was then that Paris became acquainted with this drink. The fashion for coffee was introduced by the king of France, who at the very beginning of the 17th century received several seedlings of coffee trees as a gift from the Dutch. The gift was truly royal, since until that time no one could get seed material for cultivation. The Arab world guarded its secrets vigilantly. However, the cunning Dutch managed to smuggle out the seeds, and after several years of experimentation, they obtained viable coffee tree seedlings. Some of them were presented to their powerful neighbor.
The king was delighted with the gift, and coffee began to be included in the mandatory menu of Versailles feasts. The nobility adopted the fashionable habit. Real coffee salons began to be set up for the elite. The ladies thought the drink was too bitter, so they decided to add sugar to it. For a long time, coffee remained the prerogative of rich and influential people, until a certain enterprising Sicilian came to Paris in the second half of the 17th century. It was he who brought the business idea of creating a public coffee shop, which by that time already existed in Italy and England. Soon, the first free-access coffee house opened opposite the popular Parisian theater.
He was quickly appreciated by the theatrical bohemia, the Parisian intellectual public, students and professors. The establishment was named simply and without any pretense - café. The name was firmly entrenched and became a household name.
As the years passed, new ways of preparing the drink appeared. One of the most popular recipes was rated so highly that it became a real hallmark of French coffee. We will prepare it today.

Greek cold coffee frappe
This is how frappe is served in Greek cafes: with water and a bonus cookie.
Making this invigorating drink is very simple. It is better to take Nescafe coffee; it must be very finely ground, otherwise you may not get good foam.
Greek frappe recipe
- Pour about water into a tall glass onto your finger.
- Add 1 spoon of instant coffee and sugar to taste.
- Beat the mixture in any convenient way - there are special mixers, you can use a shaker, or you can do it as in the video below if you don’t have anything on hand!
- When fluffy foam rises, add ice, milk and cold water to taste. Your coffee is ready!
The history of frappe
This drink is a purely Greek invention, and it has not yet taken root in any other country. And Frape, like many discoveries, appeared by accident. In 1957, at the International Exhibition in Thessaloniki, the Greek representative of Nestle presented a new product - a chocolate drink for children, which was whipped with milk.
One of the employees of the Greek representative office, Dimitris Vakondios, was a lover of instant coffee. One day during a break he wanted to drink coffee, but he didn’t have hot water. Then he decided to try making cold coffee, and shook all the ingredients in a shaker. This is how the world's first frappe turned out!
How to drink frappe
The categories of this drink are approximately the same as those of Greek coffee - sketos, metrios, glycos . That is, black, medium sweet and sweet. Some people add milk, some don’t, it’s a matter of taste. Of course, people drink frappe not only in the summer, but all year round.
The word frappe is of French origin, meaning “whipped, mixed.” But for the French, frappe is usually a cold cocktail with milk, ice cream or fruit. Greek frappe is sometimes also served with ice cream, at the client's request. The Greeks remade the French word for themselves, and frappe in Greek is called ο φραπές - a masculine word, by analogy with the word “ο καφές” - coffee.
Printing on coffee and coffee foam
Images on coffee drinks are considered art. The most talented baristas receive applause and good box office receipts. Any coffee shop has the opportunity to purchase a coffee printer. It will print the desired image on the drink.
For the last few years, such equipment has been available for public sale.
At first, employees of cafes and bars greeted the new product with caution. However, the visitors were delighted
Today, coffee printers are purchased by both expensive coffee shops and budget establishments.
Initially, single-color pictures were available, but now you can easily print an image of several colors.
What do you need to know about the operation of such a device?
- Printing is carried out on light surfaces, preferably even white ones. Otherwise the image will not be noticeable. Ideal for milk foam and ice cream.
- It is necessary to have a sufficient amount of consumables in stock, namely: coffee extract or food coloring.
- Need an image layout. The coffee printer contains a database of images, but they are not enough to create something exclusive. You should prepare the desired drawings and photographs.
Cooking methods
Cooking in Turk
A very strong and invigorating drink can be prepared in a Turk. To do this you will need:
- 30 g water;
- natural coffee of appropriate grinding;
- Turk.
Welding sequence
Coffee is poured into a pot and filled with cold water. The drink must be brewed over low heat. As soon as the foam begins to rise, the drink should be immediately removed from the heat. You can't boil it.
Preparation in a coffee machine
For this drink, freshly ground grains are used, which are formed into a tablet using a holder. You need to do the work quickly, because in the fresh air, essential oils evaporate very quickly, and coffee loses its taste and aroma.
The holder with the tablet is placed in the machine, and the extraction process begins. The coffee machine prepares a cup of coffee with a volume of 40 g in 25 seconds.
The quality of the jet serves as an indicator of the work done. If it is voluminous and light, it means the coffee was ground coarsely, or little effort was applied during tempering. If the stream is too narrow and dark, the coffee is ground too finely. All this will need to be taken into account when preparing again.
Cooking in a saucepan
If you need to brew a large amount of espresso coffee, then a capacious enameled saucepan with a tight-fitting lid will come to the rescue.
Rinse the pan with boiling water, add the required amount of water and add a little sugar. The water is brought to a boil and coffee is added to it. Afterwards, the pan heats up again, but cannot be brought to a boil. After thick foam appears, remove the pan from the heat and let the drink brew for a few minutes.
Original recipes with additives
Raf has gained enormous popularity, many baristas have come up with their own recipes, which is why today there are so many variations on the theme of a delicate, aromatic drink. Moreover, in its short history it has received awards in various competitions and today has become part of the classic coffee menu.
Lavender
The classic recipe appeared only in 1996, but this did not stop creative people with a rich imagination from coming up with fascinating legends for the drink. One of them is about lavender raff. The Chinese emperor went on a campaign with his wife. One day he was preparing coffee for the woman he loved, but fell asleep. When the couple was resting, lavender flowers fell into the cups, and the drink turned out wonderful. After drinking it, the emperor and his wife felt cheerfulness and strength.
To prepare a treat according to the recipe from the legend, you will need lavender petals. You can purchase them at any pharmacy or grow a flower yourself. A teaspoon of petals is crushed, added to the rest of the ingredients, then prepared according to the classic recipe.
Chocolate with spices
You will need one shot of espresso, 100 ml of cream, 50 g of dark chocolate, but if you prefer milk chocolate, take it and other spices to taste. You need to melt the chocolate in a water bath, brew coffee, mix the ingredients, and beat them. Sprinkle spices on top.
Orange
An original combination of the taste of coffee beans and citrus fruits. To prepare, you will need a teaspoon of chopped orange zest, then the drink is prepared according to the traditional recipe. However, you can use orange or tangerine flavored syrup (20 ml), then you don’t have to add sugar.
Another recipe - instead of zest and syrup, add 20 ml of freshly squeezed juice. The juice is pre-strained. Other components are added according to the traditional recipe. Citrus drink speeds up metabolism and strengthens the immune system.
Instead of sugar, add honey - 1-2 teaspoons, depending on how sweet you drink your coffee.
Rough cheese (cheese) coffee
For a cheese treat you will need soft cream cheese - 30 g, milk 100 ml, cream 50 ml, one shot of espresso. An important feature of this coffee is that all ingredients must first be blended with a blender, only then heated. The top of the drink is decorated with grated cheese.
With halva
Instead of sugar, use halva, if you take a traditional dessert - 25 g, if syrup - 20 ml, you also need cream - 150 ml, one serving of espresso. Some gourmets add 10 ml of nut syrup.
Raf Snickers (peanut)
All you need for a peanut treat is adding a tablespoon of peanut butter. Then the products are mixed and traditionally whipped. If you prefer sweet peanut raffe, pour in 20 ml of caramel syrup. To decorate the finished drink, use whipped cream and roasted peanuts in sugar.
Raffaello or coconut
Recipe for connoisseurs of Raffaello sweets and coconut flavor. Instead of cream, coconut milk is used (volume - 150 ml). Then the ingredients are mixed and beaten. The drink is sprinkled with coconut on top.
Walnut
Coffee and nuts are another successful combination of flavors. To prepare nut raffa you will need 15 ml of hazelnut syrup, Brazil nut syrup, 150 ml of cream, one serving of traditional espresso. Decorated with whipped cream and roasted almond petals.
Raf gingerbread
Coffee and the subtle taste of gingerbread are the perfect combination for the cold season. Instead of sugar, you can use 10 ml vanilla syrup, you also need to add 20 ml gingerbread syrup, 150 ml cream, one shot of espresso. Decorated with whipped cream and candied fruits.

Elliniko
This recipe for natural Greek coffee is almost exactly the same as what is prepared in the East. The fact is that the Greeks were once under the rule of the Turks, then they freed themselves and declared independence. Some dishes and drinks from those times have remained relevant to this day.
For helliniko, you need to properly grind the grains, turning them completely into dust. The process goes like this:
Pour 2 teaspoons of powder into a copper pot, add sugar and add water.
Place on fire and watch when the foam begins to rise.
As soon as this happens, the Turk is removed from the heat and left for a minute.
Place on the fire again and bring to a boil.
The ritual is repeated three times
It is important to maintain a time interval between heating and cooling. This Greek equivalent of the oriental drink is served with a glass of water.
Interesting! In Greece, people never drink coffee quickly while running off to work. This ritual is performed in a cafe, although the prices there are much more expensive.
Kaimaki
The legend about coffee, which appeared in Greece, is associated with kamaki - the foam that is formed when brewing coffee in a Turk. If the time has come for a girl to get married, then you can determine whether the groom likes you or not by the quality of the foam on the coffee. If it is dense and tall, the groom can count on reciprocity. If Greek coffee is served without foam, then the wedding will not take place.
The secret to making lush foam in the Turk is that the drink is never brought to a boil, but is removed every time the foam begins to rise. This technique is done 2-3 times, and it came to the Greeks from Turkey. The drink is considered properly prepared if there is still foam at the bottom at the end.
Freddo Espresso Shakerato Recipe
Ingredients:
- 50 ml espresso or any other black coffee;
- ice;
- sugar - to taste.
Preparation:
- Brew black coffee.
- While the coffee is hot, dissolve the sugar in it.
- Fill the shaker with ice.
- Pour slightly cooled coffee onto the ice and shake vigorously for 20–40 seconds (the main thing is that the ice does not begin to melt rapidly).
- Pour the frothed coffee into a small transparent glass.
Ingredient Selection
Professional roaster Andrea Bertolino recommends preparing Freddo only from Arabica beans: ice increases the bitterness of the coffee, and if the blend contains robusta, the bitter aftertaste becomes unpleasant. For the same reason, beans that are too darkly roasted are not suitable.
For Freddo cappuccino, inexpensive mixtures of several varieties of Arabica are usually used. They also make a pretty decent Freddo espresso. But if you want to pamper yourself or surprise your guests, you can make Freddo espresso from specialty coffee. An option for lovers of the exquisite fruity flavor of coffee is a mixture of Arabica with a small amount (up to 20%) of Excelsa.
In Italian cafes, Freddo is prepared on the basis of espresso; in Greek cafes, coffee is sometimes brewed in a Turkish coffee pot. At home, you can prepare coffee base in any way.
To brew coffee, you need soft, unboiled water without chlorine, preferably bottled, with a mineralization of 75 to 250 mg/l.
To prepare Freddo Cappuccino coffee, milk with a fat content of 2.5–3.2% is used. If this indicator is less, the foam will be somewhat dry. Milk should be whipped cold.
Liqueurs are often added to Freddo cappuccino coffee: chocolate, egg, caramel, cream, amaretto, frangelico. The drink cannot be prepared with fruit and berry liqueurs: they contain acids, which cause the milk to curdle.
Origin
The frappe cocktail appeared relatively recently. It was first prepared by Dimitrios Vakondios, who worked at one of the Nestle fair stands. The recipe was invented due to a coincidence.
One summer day in 1957 the weather was very hot. Dimitros wanted to drink a portion of his favorite coffee drink, but he didn’t have boiling water on hand. But there was a shaker available. The guy just decided to mix sugar, coffee and cold water in it. He also added a few ice cubes to the shaker.
The result of such actions was pleasantly surprising. The Greek managed to prepare an invigorating and refreshing cold drink with a fairly strong taste. Besides, he looked attractive. While beating, a high foam formed.
History of affogato
It is unknown when and who invented affogato, but this coffee dessert could only have been born in Italy. The fact is that by mid-day, most people's blood sugar levels drop. In southern countries, the afternoon hours are the hottest time, when one uncontrollably falls asleep. Affogato, consisting of sweet ice cream and a small amount of strong coffee, replenishes energy and gives a boost of vigor.
Therefore, in Italy it is customary to enjoy affogato after (or instead of) lunch. Dessert simultaneously replaces a soft drink, energy drink and a light lunch.
Translated from Italian, affogato means “drowned”: a scoop of ice cream, poured with hot coffee, melts and literally drowns in a delicious creamy coffee sauce, to which liqueur is sometimes added.
There is no standard recipe for affogato, so each cafe brings something different to the classic technology. In 2022, the name McAffogato was even born, which was invented by regulars of the UK Cop Humor police forum. When law enforcement officers posted photos of their favorite dishes online, affogato coffee from McDonald's took first place in the ranking. Macaffogato differs from all other options in that it is prepared only with a double shot of espresso and vanilla ice cream.

Tonic drink
Frappe coffee (French frappe - chilled in crushed ice) is a cold, foamed milk-coffee drink. Initially it was popular only in hot Greece, but soon it was also loved in Spain, France and Cyprus. In these countries, this cocktail is often referred to as "iced coffee" or "ice coffee".
It prepares quickly, i.e. Doesn't take much time to prepare. Served and consumed cold. Very refreshing and tonic in the summer heat.
How Frappe Coffee Originated: History
In 1957, a chocolate-based children's drink from Nestle was presented in Thessaloniki. At this ceremony, one of the company representatives, namely Dimitrios Vakondios, during a long break, wanted to drink the usual instant coffee he was used to. Not finding boiling water anywhere, Dimitrios still did not deprive himself of coffee - he decided to mix coffee with cold water, sugar, crushed ice and milk in a shaker. This is how the first Frappe coffee in history was born.
What is frappe
Frappe is a Greek iced coffee that is perfect for hot summer days. It has unusual, interesting flavors. The French name was assigned solely for euphony, and frappe was invented in Greece.
The drink is considered low-calorie. Therefore, it can be safely drunk by those who are on a diet and watching their figure.
In addition, the cocktail has the following benefits:
- Pronounced refreshing effect.
- The caffeine concentration is low.
- Easy to prepare. This task can be easily accomplished at home, even in the absence of modern technology.
- Attractive appearance due to the high foam on the surface of the drink.
- Low cost. All ingredients used are affordable. In addition, it is allowed to use not only natural ground grains, but also a soluble product.
- Diversity. There are many variations of recipes, so every coffee lover will be able to choose the most suitable one for himself.
Modern execution of cappuccino
Today, the coffee machine is, of course, much more compact and easier to use. Cappuccino has spread throughout the world and has acquired many variations of recipes.
Americans love to drink sweet and aromatic cappuccino. And in Greece and Italy they love Fredo's cold cappuccino. But most often you will find “wet cappuccino”. Use cold milk for whipping and do not heat it above 65-70 degrees.
The familiar cappuccino was invented in Italy
Due to this, the foam becomes elastic, glossy, and looks like melted ice cream. It’s convenient to draw pictures on this (latte art) and this drink is simply more comfortable to drink, it doesn’t burn.
You should avoid using:
- for hypertension and blood pressure problems
- for cardiovascular diseases
- for gastritis and liver problems
- for diabetes
- allergies
- for obesity
Cappuccino should not be consumed during pregnancy. During pregnancy, it is advised to abstain from any coffee drinks. But cappuccino contains a lot of milk, so if your doctor allows it, treat yourself to a cup of cappuccino a couple of times. During breastfeeding, you will have to give up cappuccino.
If you are not in a risk group and you can drink coffee, try making it at home!
Where to drink coffee in Greece
To try real Greek coffee, you should go to one of two typical local establishments: cafeteria or kafenio.
Cafeterias are very popular and are located in all major cities. These are traditional places where, in addition to an extensive coffee menu, there is a menu with Greek desserts and snacks. Here you can spend a pleasant evening with friends, or in solitude, reading a book or newspaper. In spring and summer, cafeterias place tables outside and often operate as bars at night. This partly explains the average age of visitors - Greeks over 35 are not frequent guests in the cafeteria.
In turn, kafenio are authentic Greek cafes, which at all times have been a place for residents to meet, discuss and have heart-to-heart conversations. Historically, it was men who gathered in the kafenio: to relax after a hard day at work, report news, play backgammon and, of course, drink coffee. It is not surprising that the situation here was and remains as simple as possible.
Although today cafeterias have almost completely replaced kafenio from large cities, such establishments are still easy to find in the Greek provinces. People come here to see friends, discuss sports or politics. As a rule, the Kafenio audience is permanent and no longer young - everyone knows each other well and can communicate directly.
