For those who like a non-bitter coffee drink with milk and an original taste, Warsaw-style coffee is suitable. Find out how to make this drink yourself at home. The recipe is completely simple, but it can be adjusted depending on your preferences.
For the first time in Poland, the strong drink began to be prepared back in 1724. However, not everyone liked black coffee - espresso due to the fact that it had a bitter taste. Warsaw baristas figured out how to use milk and adjust the amount of ingredients to soften the taste and make the drink less rich. The second option was more popular among cafe visitors in Warsaw. In addition, Warsaw-style coffee is now popular all over the world.
Subtleties of making coffee in Warsaw style
Let's look at some tips from Polish baristas that will allow you to prepare a delicious and traditional drink.
For the Warsaw recipe, only natural coffee is used. Instant is not suitable, as it has a less rich taste and unstable aroma. It is advisable to grind coffee beans immediately before preparation.
There are no strict criteria for coffee, but you should choose a quality product. The grains must be fresh and stored in optimal conditions. Coffee that has been sitting for several months may not produce the desired aroma.
For Warsaw style coffee, medium grind coffee is suitable. Before drinking, the drink is filtered, so it is better not to use fine grinding.
In addition to coffee, you will need baked milk to prepare the drink. Replacing it with the usual one will lead to the loss of the traditional taste.
Water and milk must be hot; boiling water will only spoil the drink. Boiled milk contains foam that should not get into the coffee.
Description of preparation:
The coffee march across Europe began in the mid-17th century.
The first coffee shop appeared in Venice, then the British became coffee gourmets. Then this noble drink came to Italy, at the end of the century to Austria and finally, at the beginning of the 18th century, it reached Poland. The gentry accepted the newfangled ritual with pleasure. However, the gentleman did not particularly like the bitter taste. The chefs of the nobles cleverly figured out, in their opinion, the shortcomings of the new drink and made it soft and tender and especially tasty. This recipe was kept secret for a long time. Now Kava sour cream, which is exactly what its original name sounds like, has become public property. Watch how to make coffee the Warsaw style. Classic Warsaw coffee recipe
The drink is prepared in a Turkish pot with a small amount of water. For 1 teaspoon of coffee you will need 45 ml of cold water. You need to bring the coffee to a boil several times. The main thing is not to let the liquid boil. After this, 100 ml of baked milk is heated over low heat until hot.
The coffee is strained and combined with milk. The mixture is poured into a heated cup in a thin stream. According to another method of preparation, coffee with milk is brought to a boil one more time and only then served on the table.
Necessary equipment
To prepare the Warsaw drink without leaving home, you will need a good Turk. We looked at how to choose it here. For true connoisseurs of the drink, it will always be the main equipment for making coffee. No car can replace Turku. Someone great said that properly prepared coffee has a leisurely aroma. And he turned out to be right! Choosing a container can be difficult. We will try to help you with recommendations for choosing. Turks are made from a variety of materials:
- Made of ceramics and clay;
- Aluminum and copper;
- Silver and glass;
- There are even Crystal Turks!
A steel container will last you the longest. Ceramic and steel are easier to maintain. Copper is for uniform heating of your favorite drink. Good oxygen saturation is guaranteed by ceramic and clay containers. They hold the temperature best.
In restaurants and coffee shops, especially fast foods, coffee is prepared using coffee machines. Thus, the main principle of coffee preparation is violated: “Real coffee has the aroma of leisure.” The ritual of drinking this drink is meditative and helps set you up for a successful and productive day.
If you are looking for coffee equipment for yourself and cannot choose between a copper or ceramic Turk, then this is the place for you.

Classic Warsaw coffee recipe
Ingredients:
- eight grams of coffee,
- sixty milliliters of baked milk,
- the same amount of water, five grams of sugar.
Pour coffee into the cocotte maker or Turk, pour water and put on fire. We wait until it boils. Cook over low heat. Remove from heat as soon as it boils. After ten seconds, return the Turk to the fire and boil again. Then we repeat the procedure. There should be three boils in total. Next step: cool and strain the coffee. We heat the baked milk, but not to one hundred degrees. Heat a cup and pour milk into it. In a thin (!) stream, pour our coffee directly into the milk.

Kawa Warszawska recipe with milk
The resulting drink must settle. After this, heat it up again to one hundred degrees. Let it stand for two minutes again and boil for the third time. When the coffee has cooled a little, strain it and whisk until foamy. Place a small piece of chocolate in a spoon and keep it over steam. Pour the resulting melted chocolate into the cup. No need to stir before serving. Chocolate serves as a decoration for the drink.
Warsaw coffee with foam
We will need the following ingredients:
- eight grams of coffee (as in previous recipes),
- one hundred twenty milliliters of water,
- twenty five grams of sugar,
- one hundred milliliters of baked milk
- eighty-five milliliters of milk for foam.
Pour eighty-five milliliters of milk into the Turk and place it in the oven, preheated to one hundred and sixty degrees. As the foam appears, remove it. After removing three foams, turn off the oven. Now we prepare coffee from coffee and milk.
You can, of course, use a coffee maker or machine, but remember that coffee made in a Turkish coffee machine will always be better. We have already explained why. A drink prepared in a Turk must be strained, otherwise an unpleasant sediment will form.
Heat the baked milk, mix it with coffee, add sugar, and bring to a boil. Pour the drink into a preheated cup. All that remains is to decorate it with foam.
Warsaw coffee with cream

- a quarter cup of cream,
- eighty-five milliliters of baked milk,

Properties
The taste of coffee largely depends on the degree of roasting. There are several types of preparation of coffee beans for consumption. Depending on the type of roasting, the taste of Warsaw-style coffee also changes. Roasted coffee can be used for preparation:
- weak;
- average;
- strongly;
- at the highest level.
And even coffee beans of different varieties that have undergone the same processing will differ greatly in taste. Meanwhile, the concepts of “weak” and “strong” are very relative, because there are so many people, so many tastes.
To prepare the Warsaw drink, French roasted beans are used, which are characterized by a dark brown color and the presence of cracks on the surface of the grain. In this case, the coffee turns out aromatic, with a bitterness and a faint burnt aftertaste. The same type of roasting is necessary when brewing espresso.
Next, grinding is important. For this cooking method, the instant version of the raw material is completely unsuitable, as well as the finely ground one, which completely distorts the taste of the drink. Experienced baristas say that a medium grind is ideal for this recipe. Before serving, the finished drink is filtered.
There are no special requirements for the liquid. The only thing you should know is that water and milk should not be brought to a boil when cooking. They must be very hot, then the taste of the coffee will truly reveal itself. It is important that foam does not form and fall into the cup when pouring, unless this is a recipe for Warsaw-style coffee with foam.
In the morning, just a few sips will lift your spirits, eliminate drowsiness, and give you energy for the whole day.
With spices
Although there are no spices in classic Warsaw coffee, the modern recipe adds vanillin and cinnamon. 300 ml of fresh milk is poured into the pan. Add cinnamon and vanillin at the tip of a knife. The mixture is heated over low heat until foam appears, which must be skimmed off.
Add 1 teaspoon of coffee to boiling milk and mix the ingredients thoroughly. The coffee with milk is placed back on the stove and boiled until it boils. This process is repeated several times, after which the coffee is poured into cups.
Amazing coffee adventures in Europe
Coffee owes its appearance in the European part of the continent to the generosity of the Dutch. It was they who, with considerable difficulty, obtained the treasured seeds and grew the first seedlings in greenhouses. Having made sure that the trees took root well in the warm Dutch colonies, for example, in Java, the Dutch, for political reasons, decided to please the French with a rich gift. The Sun King appreciated the drink, and soon feasts at Versailles were no longer complete without coffee. Its popularity grew, as did its geographic distribution. The first cafes appeared in Venice thanks to trade with the Turks. From there the drink spread throughout Italy. Turkish troops fleeing Vienna in 1683 left behind bags of coffee beans. The resourceful Viennese quickly realized what a treasure they had got. Coffee appeared in Poland around the beginning of the 18th century. The then enlightened Warsaw, which always gravitated towards Parisian trends and fashions, eagerly began to taste the drink. It is clear that the noble lords found the taste excessively bitter. Therefore, chefs skilled in their craft came up with a new way of preparing the drink, which became much more delicate. At first it was kept strictly secret, but over time it became known to the general public. Its recipe can be found on numerous forums, however, today we are preparing Warsaw-style coffee with a real barista, who will share subtleties and secrets that are known only to professionals.
Subtleties of preparing the drink
You need to make coffee at home exclusively from natural beans. A soluble product will not work. When using it, the drink will not acquire the necessary taste qualities. In addition, the following recommendations should be followed:
- You need to grind the grains before starting cooking. It is better not to perform these actions in advance,
- coffee fractions should be medium in size. Excessively small and large ones should not be used,
- It is better to add baked milk instead of regular milk . This product has a special aroma,
- Cups should be warmed before filling. To preserve the delicate foam, the liquid is poured into them in a thin stream, slowly,
- Boiled milk should not be added to the composition. Otherwise, there will be pieces of foam in the finished drink,
- decorate the surface with cocoa or melted chocolate. In Poland it is not customary to use cinnamon for this purpose.
