These coffee vendors have a drink they call a pumpkin spice latte or pumpkin spice latte. However, their drink has little in common with coffee, much less pumpkin. Often, salespeople think that adding sweet syrup to drinks is enough to better sell their coffee and espresso. I'll show you how to make a pumpkin spice latte by sweetening it wisely.

To sweeten the drink, add just a teaspoon of agave syrup. Also, I use fresh spices rather than aromatic mixture.

The goal is to have a drink made from natural ingredients that doesn't require you to skip two meals because there are too many calories. It should be aromatic, smelling like coffee, pumpkin and spice - so everything a real pumpkin latte should contain.

To prepare the syrup, we need:

  • pumpkin – 500 g
  • sugar or maple syrup – 150 g
  • cinnamon – 1 tablespoon
  • cloves – 1 teaspoon
  • nutmeg – ½ teaspoon
  • ginger (ground) – 1 teaspoon
  • anise – 2-3 stars
  • dark chocolate – 20 g
  • water – 200 ml

For the latte:

  • freshly brewed espresso – 500 ml
  • milk (any vegetable can be used) – 100 ml
  • cream – 100 ml

Pumpkin Spice Latte Recipe

For this recipe I use 60 ml of freshly prepared pumpkin juice. If you don't have a juicer, you can also puree the pumpkin using a classic blender and extract the juice from the resulting puree. For this you will need a very juicy pumpkin. Another option is to roast the pumpkin in the oven before blending it, but cooking also destroys most of the vitamins.

Our juicer is called Omega 8006, but any juicer will do. I recommend extractors with double augers: they extract juice more delicately and preserve the beneficial substances of fruits and vegetables.

Obviously, for successful drinking you will also need good coffee/espresso. For this recipe I used Espresso No. 17 from Sonntagmorgen.com - great choice!

Ingredients

  • 60 ml fresh pumpkin juice
  • 200 ml milkshake
  • 40 ml espresso (for coffee machines: I prepared two risettos on the Krups EA 8808)
  • 1 pinch nutmeg
  • 1 pinch tonka beans (they have a very intense aroma)
  • 1 pinch pink pepper
  • 1 pinch cayenne pepper (or more if you like your magner spicy)
  • 1 teaspoon agave syrup (caution, very sweet)
  • 1/3 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 pinch of cloves

For those who want to make a spicy vegan pumpkin latte, you can obviously substitute plant milk for the milk. It also works with lactose-free milk.

Preparation

Extract the juice from the pumpkin and leave the pulp in the refrigerator. You can reuse it: for making muffins or for making soup or vegetable pancakes.

Pour 60 ml of pumpkin juice into a glass. Combine spices and agave syrup (or similar syrup) in a separate bowl. While stirring, add the resulting paste to the zucchini juice.

Note: Use tonka bean sparingly as it is very flavourful - it is my favorite flavoring for Christmas brioche cake.

Now add a milkshake to the drink. I used the EA 8808 milk frother for 35 seconds. For portafilter users, this equates to approximately 200 ml of milkshake. Then add espresso (or two risettos).

Visually it makes for a really interesting drink. You can stir the pumpkin spice latte or drink it, keeping the layers. This is the perfect fall latte, both visually and seasonally. Coffee and (real) pumpkin juice make it a flavorful and natural pick-me-up. The flavors of all the ingredients combine perfectly with each other.

How to Make Starbucks Coffee at Home - Pumpkin Spice Latte

My recipe makes 2 hot drinks and you'll still have a bottle of pumpkin syrup left over to use over the next week (you won't have much longer).

Ingredients:

  • Pumpkin – 500 g
  • Water – 500 ml
  • Granulated sugar - 250 g
  • Ground cinnamon - 1 teaspoon
  • Ground ginger - 1 teaspoon
  • Ground nutmeg - 1 teaspoon
  • Ground cloves - 1 teaspoon (or 3-4 whole cloves)
  • Strong coffee – 200 ml
  • Milk – 200 ml
  • Whipped cream for decoration - optional

Preparation:

First you need to make pumpkin syrup. Pumpkin can be boiled or baked in the oven. You can also take ready-made canned pumpkin puree (look in the Baby Food section). I prefer to boil it and then make syrup using pumpkin broth.

  1. Peel and cut the pumpkin into small pieces. Place it in boiling water and cook until completely soft. The finished pumpkin can be pureed with a blender directly in the saucepan of water where it was boiled, or removed from the water and mashed well with a fork, and then returned to the saucepan.
  2. Mix spices: ginger, cinnamon, nutmeg and cloves. This mixture is called Pumpkin Pie Spice, it is very popular in the USA, and is sold there ready-made.
  3. Place spices and granulated sugar in a saucepan with pumpkin puree. Stir well and cook until thickened over medium heat, stirring occasionally.
  4. When the pumpkin syrup thickens, strain it through a sieve and pour it into a storage container, and leave 100 ml of syrup to make two servings of the drink.
  5. Heat the milk on the stove or in the microwave and pour into mugs. In the original recipe, the milk is whipped, but I don’t do this - it doesn’t affect the taste at all.
  6. Prepare strong, hot coffee and pour it into mugs with milk. The original recipe uses espresso, but you can prepare coffee the way you like - in a Turkish coffee maker, in a coffee maker, in a coffee machine, or you can use regular instant coffee, just make it more concentrated by reducing the amount of water or increasing the amount of coffee.
  7. Pour pumpkin syrup into mugs and stir the drink.
  8. If you wish, you can whip the cream (or use ready-made) and decorate the mugs with cream caps and sprinkle cinnamon on top. I often do without cream - the drink is great without it.

As you can see, the recipe is simple, and even a slight simplification does not spoil the taste at all. And when drinking a pumpkin spice latte, you will certainly be warmed by the thought that just one cup of such a wonderful drink in a famous coffee shop costs about 300 rubles.
