Orange raff coffee: recipe at home, how to cook

The fantasy of coffee lovers to create new drinks knows no bounds. Gourmets endlessly experiment with espresso, milk and other ingredients, creating a variety of cocktails. One of the latest results of such experiments was raff coffee. We will look at the orange variation of this new cocktail in this article.

It should also be mentioned that there are other types of raff coffee: classic (vanilla), honey, cinnamon and even sage and lavender. But many gourmets believe that such a soft combination provided by orange juice, espresso and cream cannot be found in any other cocktail. Rough can be prepared at home, although it will be much easier and faster to make the drink with the pitcher of a professional coffee machine. But a French press and a cezve will also work.

Interesting history of raff coffee

This drink appeared quite recently, at the very end of the 1990s. In the Moscow Coffee Bean coffee shop near the Kuznetsky Most metro station there was a regular named Rafael. He asked the barista to make a drink with a mild taste, vanilla aroma and moderate sweetness. To please the regular visitor, the staff tried their best. And as a result of long experiments with espresso, cream and vanilla sugar, a drink with a wonderful stable cap appeared. Gradually, other visitors began to order “coffee like for Raphael.” This is how the drink got its name. Soon, to shorten it, they began to call it simply “raf.”

This coffee cocktail gained popularity in the countries of the former Soviet Union. The baristas taught their colleagues from other coffee shops how to make raf. This is how the drink became popular in Belarus, Ukraine, Moldova and Kazakhstan. In Western Europe there is (and has been for a long time) its own rough coffee (pronounced “raf”). But this black drink is brewed from coarsely ground coffee for those gourmets who like intense bitterness and high strength. The Russian cocktail is gentle and sweet. There is not even a hint of bitterness in it. The classic cocktail soon began to be made with numerous variations. One of them is orange raf. But gourmets have diversified its basic recipe with numerous versions. So, the citrus component can be obtained:

  • from the zest,
  • from juice,
  • from syrup,
  • from liquor.

How to cook classic raf

Espresso, cream, vanilla sugar... We've already heard this list of ingredients somewhere. Surely! This is a set of products for cappuccino! What is the difference between these two coffee drinks? Only by the method of preparation. In a cappuccino, the espresso is prepared separately and poured into a cup. Milk or cream is whipped and added at the very end, forming a cap. And in classic raffa, all ingredients are mixed in the pitcher of a coffee machine or (at home) in a mixer and whipped together.

This method of preparation allows the ingredients of the cocktail to “marry” and form a strong connection. The orange raffa recipe differs from the classic one only in the addition of a citrus component. But it is also mixed with other ingredients at the very beginning of preparing the drink. Our main task is to prevent the cream from coming into contact with citrus juice. How to do it? Read on.

Historical reference

The history of raf coffee began in 1996. The drink was prepared for one visitor to the coffee shop, whose name was Rafael. Choosing coffee to suit his taste from the menu, he could not find anything exactly to his liking; in each recipe he was missing something.

So, the guest loved strong espresso with added sugar and cream. Due to the fact that the cream in the coffee shop was free, Rafael paid exactly the same amount for the drink if he drank regular espresso.

A short time later, the drink was introduced into the menu, and it was widely loved by visitors. Raphael's friends also consistently preferred this delicacy. As a result, the name of the coffee stuck as raf coffee.

Raf coffee is a drink that was invented in Russia, but is also very popular in many countries.

Currently, this drink is coffee with a delicate airy foam that looks like a cloud. What kind of aroma stands out during preparation... Many different types of recipes are prepared based on espresso.

However, raf coffee often has the same composition, but is prepared in a different way: all the ingredients are mixed together at once and whipped in a pitcher, but this is only recently. Previously, the drink was prepared in a cup, carefully mixing the ingredients.

It seems that there is nothing special in the drink, the composition is like regular coffee, but it tastes completely different precisely due to the special preparation technology. Rough coffee is served in a cappuccino cup or in a special tall glass, like for a latte. Serving means a lot for this drink, so don’t skip it.

Rough coffee has a fairly high calorie content due to the fact that it contains cream and sugar. Therefore, if you do not want to spoil your figure, then either do not drink it at all, or enjoy it very rarely.

Drink ingredients

One standard serving of orange raffa (180 milliliters) requires one shot of espresso. As with making cappuccino, you will need twice as much milk as coffee. Based on the fact that the shot is 50 ml, we take half a glass of cream. The last product should not be too greasy. Eleven percent will be just right. If the cream is thicker, it is recommended to dilute it a little with boiled water. We also need two types of sugar: regular and vanilla, 5 grams of both (a small spoon).

Some recipes suggest using orange sugar instead of regular sugar. It's very easy to make. Just drop some orange syrup into the granulated sugar. And finally, we need the juice of this citrus. The drink will taste better from freshly squeezed orange. But juice from a pack will also work. To decorate the cocktail, you can use cinnamon (1 gram). The seasoning will make the cap appetizing and add piquancy and tartness to the taste of the drink. You can decorate the edge of the cup with a circle of citrus.

Orange raff coffee: recipe for machine

First we brew the espresso. Already at this stage we need to decide how we will serve the coffee cocktail. Raf, since it is considered a subtype of cappuccino, is poured into medium-sized porcelain cups. But there is another way to serve it - in tall glass glasses with a small handle, like for a latte. In this case, you need to double the espresso from one shot to two.

  1. Pour cream, coffee and orange juice into the pitcher.
  2. Add two types of sugar.
  3. Beat with a cappuccino maker until a thick, dense foam forms.
  4. Warm up a cup or glass goblet. Pour in the prepared orange raff. As you can see, a small amount of citrus juice did not ferment the not very heavy cream. The mass turned out to be homogeneous.
  5. Garnish the coffee cocktail with an orange slice.
  6. Sprinkle the surface of the foam with cinnamon or grated zest.
  7. When serving in a glass, a spoon with a long handle is required. You can use it to collect the delicious foam that has settled on the walls.

Orange raff coffee: homemade recipe

What if you don’t have a professional machine with a cappuccino maker at hand? This is not a reason to refuse a tasty drink. You can also prepare raf at home. For this you will need:

  • Turk or French press,
  • saucepan,
  • mixer or a simple whisk.

First of all, we brew coffee. For such purposes, it is better to take good elite Arabica varieties. The taste of coffee brewed in a cezve is greatly influenced by the quality of the water. What flows from our taps gives the drink a metallic and not very pleasant accent. Everyone knows how to make French press coffee. But preparing a drink in a Turk is an art.

  1. So, put 4 teaspoons of ground coffee into the cezve.
  2. Pour in 150 ml of cold water.
  3. Immediately add the required amount of regular sugar.
  4. We put the Turk on the fire.
  5. As soon as the foam rises, raise the cezve over the burner. As soon as the foam settles down, we immediately return the Turk to the fire. We repeat this three times.
  6. Ready coffee must be filtered.
  7. Heat the cream in a saucepan to 70 degrees. This can also be done in the microwave.
  8. Mix cream, coffee, vanilla sugar. Beat with a mixer or whisk until foam forms.

Manufacturing Features

The process of preparing classic raf coffee using any available method includes the following stages:

  • brewing espresso;
  • heating the cream;
  • combining espresso with cream;
  • adding sugar;
  • whisking the mixture.

Espresso for raf coffee is brewed according to a traditional recipe without adding sugar. For a 170 ml serving you will need 30 - 45 ml of espresso. You can cook grain in different ways. It is best to do this in a coffee machine or coffee maker. But it is allowed to prepare black coffee in a Turk, French press, or mug. In the case of manual brewing, the coffee is passed through a filter to remove grounds.

The cream is heated by any available method to a temperature of 50 - 60 degrees, ready-made coffee and other ingredients are added and the composition is whipped.

An important technological feature is the combined whipping of espresso and cream. This stage is the main difference between raf coffee and other well-known types of drinks with dairy products (coffee with milk or cream, latte, cappuccino, mochaccino), in which mass is added to the espresso base in its original form, pre-whipped or in the form of foam.

Rough coffee is a cocktail with a delicate texture, uniform consistency and rich foam that is worth preparing. Using a coffee machine allows you to achieve this result, but you can master the recipe without special equipment. With the right approach, the difference in taste will not be critical.

Orange-chocolate raf

This cocktail requires the same ingredients as in the previous recipe. The amount of chocolate can be varied according to your own taste. The tile needs to be rubbed into crumbs. There are two ways to prepare orange raffa with chocolate. The first, classic: mix all the ingredients in a pitcher (or saucepan) and beat.

The second method is more original. Place a circle of orange on the bottom of the cup. Sprinkle with grated chocolate. Pour hot coffee. Place a cap of whipped cream on top. Sprinkle with cinnamon and grated orange zest.

Raf with liqueur

This drink will be especially good on a winter evening with friends. We provide the ingredients for 4 servings.

  1. We brew coffee - half a liter.
  2. Let's strain it.
  3. Mix coffee with 150 ml of orange liqueur.
  4. Add vanilla sugar to taste.
  5. Separately, whip the cream - one hundred milliliters.
  6. Wash the orange and carefully remove the zest (orange part).
  7. Then we clean the fruit and divide it into slices.
  8. Pour raf into tall glasses.
  9. Spread the cream.
  10. Sprinkle them with orange zest. Garnish each serving of drink with a slice of citrus.

As a non-alcoholic option, you can use coffee syrup for orange raffa. Given their wide range, you can experiment with flavors, giving the drink caramel, chocolate or citrus nuances.
