  • "Raf coffee" (or simply "Raf") is a hot drink made from espresso, cream and two types of sugar - vanilla and regular white. All ingredients are mixed and whipped with steam in a pitcher (milk jug).

    This drink was invented in Moscow, at the Coffee Bean coffee shop. One of the visitors, whose name was Rafael, did not like regular coffee, and the barista decided to whip up espresso with cream and vanilla sugar for him. Other regulars of the establishment also began asking for coffee, “just like for Raf.” The drink turned out to be very successful, and a few years later it appeared in other coffee shops. Its name was shortened to “Raf-coffee”.

    Another advantage of the Raf coffee recipe is that it can be easily prepared at home. All you need is coffee, cream and vanilla sugar. Try it and make it according to my recipes.

    Birth of a masterpiece

    When and where was the recipe for a drink born, the popularity of which is much higher than that of ordinary cappuccino? In the nineties of the last century, a small coffee shop “Coffee-Bean” was hidden near the Moscow metro station “Kuznetsky Most”. It was distinguished by its work in the American style; foreign guests often came in for a cup of espresso or cappuccino. At that difficult time, the owners of the coffee shop never ceased to surprise regulars with the available assortment of invigorating drinks.

    After a while, the coffee shop acquired regulars; it was a place for them to spend a comfortable time and taste interesting types of coffee. One of these guys, his name was Rafael, who did not like the cappuccino of the local barista, asked him to prepare something exotic and unique for him. This is how the unique Raf coffee came into being, obtained by whipping espresso with cream and vanilla sugar. The visitor was delighted with the completed order and became a frequent visitor to Coffee Bean. The drink was loved by Rafael's friends and colleagues, and soon it received the name raff coffee. Surprisingly, raf coffee soon won gourmets not only in Moscow and Russia, its fame spread throughout the world.

    A little history

    Raf was invented in Moscow in the Coffee Bean coffee shop in 1996-1997. To taste varieties of bean coffee, guests were offered espresso. Cream, milk, sugar and other similar ingredients were not included in the price of the drink; visitors could add them at will.

    One of the regular guests of the establishment, Rafael Timerbaev, could not find a drink that suited his taste. The baristas prepared all sorts of options for him, trying to find the perfect combination of ingredients so that the client would be satisfied.

    Finally it was possible, Raphael appreciated the prepared masterpiece. Soon other guests began asking for “coffee like Raf’s.” When the popularity of this recipe increased, the director of Coffee Bean decided to include the drink in the menu. True, the price for it was raised, but there were no fewer people wanting to enjoy soft and tasty raf coffee.

    In 2001, the first coffee shop called “Coffeemania” opened in Moscow. Baristas from Coffee Bean moved there, and the lavender raff recipe gained even more popularity. Now the aromatic variety of coffee is known throughout Russia and some neighboring countries.

    Raf coffee in a classic interpretation

    More than 20 years have passed since the recipe was created, but, in principle, it has not changed. Although numerous variations of the recipe exist.

    The classic includes the following ingredients:

    • you will need classic espresso - 25 ml;
    • granulated sugar and vanilla sugar are needed - 5 g each;
    • low-fat cream in the amount of 100 ml;
    • cinnamon powder in the amount of 1 g.

    When starting to prepare classic raf coffee, you need to brew double espresso and mix the remaining ingredients listed above in the pitcher. Then combine everything and beat until you get a fluffy, dense foam. Then the drink is poured into the heated cup (you can add a little cinnamon to it).

    Useful tips for raf lovers

    The classic taste of raf coffee can be modified, making it more interesting and tastier with the help of various toppings. These can be syrups with different flavors, liqueurs, honey, lavender, orange juice, as well as various spices and everything that your imagination allows.

    Raf is a fairly high-calorie drink, containing approximately 140-150 kcal per 150 mg. In order to reduce calorie content, you can add less sugar or abandon it altogether in favor of a sweetener; you can also use cream with a lower fat content in cooking.

    Lavender raff coffee

    This recipe requires all the same ingredients, only the cinnamon should be replaced with lavender flowers, you need to add one spoon. Coffee is prepared in a cezve over low heat. You need to grind the sugar immediately with the lavender flowers and add everything to the drink, add heated cream, stir and keep on the stove for another two minutes.

    To obtain a fluffy foam on the coffee, beat it with a blender. The drink should be immediately poured into cups or glasses and served until the beautiful dense foam settles.

    If you brew honey raff coffee, you do not need to add sugar, but honey should be added before the mixture needs to be whipped. A slice of lemon or lime is suitable for garnishing the finished coffee.

    The difference between raff and other coffee drinks

    Most often, raf is compared to cappuccino and latte, because they are quite similar. Both latte and cappuccino are classic drinks, much more famous than raff.

    Its main difference is the use of cream in the preparation, while cappuccino and latte are prepared using milk. If you compare the composition of drinks, raf, unlike cappuccino and latte, is prepared using cream rather than milk.

    Like latte, raf is usually served in large cups.

    Also, the preparation technology for these drinks is slightly different. For raffa, all ingredients are whipped together with the espresso, while for latte and cappuccino, the milk is whipped separately from the espresso and only then poured into it.

    Lavender raf coffee is gaining popularity every day. To be on trend, you need to learn how to cook it masterfully.

    You will need for one serving:

    • 35 ml. freshly brewed espress;
    • 100 ml. low-fat cream;
    • 5 g granulated sugar;
    • 5 g vanilla sugar;
    • ground lavender;
    • sprig of lavender.

    Preparation:

    1. Brew a drink, it doesn’t matter what you use, it can be a coffee machine, a French press or a cezve. An extreme option involves adding granulated sugar, vanilla and ground lavender directly to the Turk.
    2. If the drink was not prepared in a coffee machine, it should be strained.
    3. Warm the cream in advance using an electric stove or microwave.
    4. Pour cream into the prepared coffee.
    5. Get the desired foam by using a cappuccino maker or mini-mixer.
    6. Pour lavender coffee and decorate with a prepared lavender branch.

For the same purpose, you can throw a pinch of salt on the bottom of the cezve or warm up the ground grains on the bottom of the cezve a few seconds before.

    It is better to pour coffee with cool, unboiled water; the heat should be moderate. It is important to warm up the coffee beans, obtaining their beneficial substances, taste and smell, but do not allow the drink to boil. As soon as you notice foam rising, it is recommended to remove the cezve from the heat and strain the coffee.

    At this time, it is recommended to heat the cream. You can do this in a water bath or place them in the microwave for a few minutes. Next, it is recommended to combine 2 teaspoons of sugar (it is better if it is equal amounts of vanilla and regular sugar), heated cream and brewed coffee and beat the mixture well with a blender. When a lush foam appears on the surface, the coffee is poured into a serving bowl. It is better to warm it up over steam beforehand.

    You can decorate the drink with chocolate or coconut shavings or topping.

    Making Raf coffee according to this recipe usually involves serving it in clay cups. Ground cinnamon is used as decoration. The honey drink has a warming effect, which is why it is rightfully considered mainly a winter drink.

    Fans of nuts or Snickers bars will appreciate the nutty Raf. The recipe includes a fairly high-calorie nut butter, so the cream is replaced with milk. For 50 ml of espresso you will need 100 ml of milk, a tablespoon of peanut butter, and cane sugar or caramel syrup to taste.

    First, the paste must be diluted in a small amount of milk to a mixture of thick sour cream, then pour the resulting mixture into the pitcher. Add warmed milk, sugar or syrup there.

    Brew espresso and pour it into the pitcher, then beat the composition using a steam vent or blender. Afterwards the drink is poured into cups and decorated.

    For this recipe, it is important to choose a good-quality paste. It should be very natural, and the main component should certainly be nuts.

    Instead of vanilla sugar and vanilla, you can use lavender. Lavender Raf has a pronounced calming effect and perfectly relieves stress. In this recipe, lavender flowers are used instead of vanilla sugar. You will need half a teaspoon of dried raw materials.

    Lavender flowers must first be ground in a coffee grinder with a teaspoon of regular sugar until it becomes a homogeneous fragrant powder. The rest of the process is similar to the traditional one. Espresso is brewed (in a coffee machine or Turk), combined with cream, and lavender sugar is added. All ingredients are whipped until foamy.

    This drink is usually decorated with lavender flowers. They go great with a slice of orange.

    Fusion cuisine offers extraordinary Raf cheese coffee. From the name it is clear that the drink will have not only creamy, but also cheese notes.

    To make it, coffee is brewed in a cezve from 2 glasses of water and 2 teaspoons of ground coffee. Usually spices are added to coffee - cinnamon, ground ginger, nutmeg, cloves. But you can refuse to use them or adjust the amount to your own taste.

    Add 50 g of soft cheese to 100 ml of heated cream and carefully beat the mixture with a blender until smooth. Then all that remains is to combine the coffee, 2 teaspoons of sugar (regular and vanilla) and the cream cheese mixture in a warm pitcher and beat.

    The cheese you should use is the one that is usually put in desserts - Philadelphia, mascarpone, cottage cheese, ricotta.

    • It is better to put vanilla sugar in the cream before it is heated, so it will dissolve more perfectly and give 100% its taste and smell.
    • If the fat content of the cream is quite high, and there is no milk on hand to dilute it, you can even do this with boiled water. It is curious that more and more often, when milk and cream are added to coffee, it is called Raf coffee in English.
    • Vanilla sugar in a drink, unlike baked goods, can behave quite harshly, making coffee cloying and tasteless. You should start adding it with 3 g per serving, increasing to 5-6 g (just a teaspoon) as needed.

    If you don’t like vanilla, you can replace it with cane or orange sugar, use honey or lavender.

    You will need:

    • Water – 80 ml
    • Honey – 1.5 teaspoons
    • Garlic – ¼ clove

    Traditional recipe

    The traditional recipe is considered to be the one according to which coffee was prepared in the early 90s at Coffee Bean. You can repeat the drink only if you have special whipping equipment and a coffee machine. The latter will help prepare the “correct” espresso with a 25-30 second extraction time. The whipping apparatus will allow you to achieve uniformity of the drink and obtain a light, airy, foamy texture.

    To make one serving of Raf coffee according to a traditional recipe, you will need the following ingredients:

    • 50 g espresso (actually, a double shot of regular 25 ml espresso;
    • 100 g of cream, the fat content of which is less than 11% (if only a fatty product is available, it must be diluted with milk in advance);
    • 1 teaspoon each vanilla and regular sugar.

    First you need to brew the espresso. The flow chart shows that 7-8 mg of ground coffee beans per 25 ml of water is required. While the coffee machine is preparing the drink, you need to warm up the dishes for serving Raf coffee. This can be a clay mug or a transparent glass with a low stem.

    Cream must be used at room temperature; cool cream will not whip well and will cool the drink. The cream is placed in the pitcher, sugar is added there, after which the prepared espresso is poured into it. Now you need to beat the resulting mixture using the steam vent of the coffee machine. The drink is ready, all that remains is to serve it perfectly.

    Making raf coffee: a classic recipe in a coffee machine

    To prepare raf, which was invented by the resourceful barista “Coffee Bean” back in the 90s, you need a professional coffee machine. To obtain a sufficiently dense and uniform structure of the drink, a good steam supply is needed.

    The rest is a small matter. We take good medium roast coffee beans, we recommend using sweet varieties that best affect the taste of the dessert drink, cream 11%, 1 tsp. regular and the same amount of vanilla sugar.

    Prepare a shot of espresso in a coffee machine. A mug of raffa needs about 30-35 ml.

    Pour cold cream (100 ml) into a pitcher or milk jug and add all the sugar to it. By the way, vanilla sugar can be replaced with a small pinch of vanilla.

    Add espresso to sweet cream and, using a steam vent, thoroughly whisk all ingredients.

    Pour the drink into a cup or glass. Ready!
