In the evening, it is better not to drink caffeine-containing drinks, so as not to provoke the nervous system into overload.

Cup

Coffee brewed in pour over is served in small wide cups or smooth glasses. Usually you don’t pour the whole drink into a cup, but add small portions from the decanter. This is done in order to try coffee at different temperatures: as it cools, the coffee changes, revealing its acidity and sweetness, and the nuances of taste are better felt in a warm drink than in a hot one. Differences between espresso drinks and ground coffee drinks

We thought it would be best to start by dividing the drinks according to the “espresso criteria”. We explain this detailed analysis with an example: even if you make a latte in your coffee maker, for example, it will not be a latte, but milk coffee.

Of course, espresso is also ground coffee, but when most people talk about brewing coffee, they usually mean the filter or coffee maker method, not the espresso method.

Simply put, there are drinks for which a shot or two of espresso is specially prepared (or the drink is espresso itself), and there are drinks that are brewed with ground coffee, but are not technically espresso. Why doesn't it work technically? For various reasons, for example, insufficient pressure. These are, of course, details, but we decided to approach this issue thoroughly. All these points will be discussed further in the article.

Paper cups have been known for more than a century, but they gained real popularity with the rapid development of coffee shops and catering chains. Coffee grind level

The stores offer a choice of ground and bean coffee. To prepare a high-quality, spicy drink, it is better to buy whole grains and grind them yourself. The type of grinding depends primarily on the coffee maker, the preparation method and the coffee recipe.

To make coffee in a carob coffee maker, it is better to use medium and coarse grind beans.

Average. It is universal, more uniform, and prevents clogging of the filter holes. It grinds in 10-13 seconds, the output is grain the size of a grain of granulated sugar.

Large. This method helps slow down the passage of coffee particles through the filters and meshes of the French press. Grind in 10 seconds, resulting in grains measuring 0.8 mm.

What grind is best for a carob-type coffee maker? – medium grind grains, because they filter well without clogging the openings of the horn. In this case, coffee acquires an excellent and rich taste (with coarsely ground beans, the taste is less pronounced).

Coffee beans should be fresh, well roasted and dry. To preserve the taste and beneficial properties of the drink, it is better to grind the grains in small portions (3-4 times).

What to consider when setting up espresso

Roasting degree

The darker the coffee is roasted, the higher its extractivity (that is, the ability to release soluble substances into water) and the more easily it releases its aromas. Dark roast coffee already has good extract. To raise it for medium and light roast coffee, use a higher water temperature and a finer grind. If your machine's settings allow you to adjust the temperature, increase it to 94-95 °C when preparing coffee from groups C and D.

For group D, it is better to increase the weight of the finished drink, because for good extraction, that is, to dissolve all the necessary substances in the grain, more liquid will be required. Try to increase the amount of ground coffee to 20-22 g, reduce the grinding and aim for a yield of 36-40 g of drink in 25-40 seconds.

Treatment

In the description of each variety we indicate the processing method. Washed coffee is denser, so choose more extreme conditions for it: higher temperatures and finer grinds. For dry processed varieties, reduce the water temperature a few degrees if machine settings allow.

Roast date

For espresso, it is better to use coffee that has been roasted one to two weeks ago. If you use grains that are too fresh, their active degassing will slow down the spill. If less than 10 days have passed since the coffee was roasted, you can add another degree to the base temperature. And if the coffee has been sitting for a month, you should adjust the grinding - make it smaller.

Origin

The growing conditions of coffee, terroir, determine not only the taste potential. The settings for espresso depend on the variety and height of growth. As the height of growth increases, the extract content decreases: the higher the coffee tree grows, the more difficult it will be to boil the necessary substances from the grain. The solution is to increase the temperature. Some regions are characterized by a denser grain structure: for example, for Kenyan coffee it is better to reduce the grinding.

Exceptions

Robusta, mixtures with robusta, varieties from group A - decaf and monsoon malabar - also require a different approach.

For Robusta espresso or Arabica-Robusta blends, reduce the temperature by one or two degrees.

Decaf at normal settings will “flow like a river,” so feel free to reduce the grind by several notches and increase the amount of coffee to 20 g or more, controlling the pouring time and the yield of the drink.

For Monsoon Malabar, it is worth increasing the amount from 18 to 22 g or, if there is no suitable basket, greatly reducing the grinding. The volume of the drink will be 34-38 ml, and the pouring time will be about 25-27 s.

What to serve it with

An important parameter when choosing coffee ware is its volume. Baristas note that this directly depends on the type of drink they will be served with. Classic coffee cup options:

  • For an oriental recipe. This coffee is strong, so it is poured in very small portions. The cup volume should be between 60 and 90 ml.
  • For espresso. Classic requires 30-35 ml of water. As a rule, 2/3 of the dishes are filled with it. Therefore, they use demitasse from 35 to 45 ml (cafes sometimes use larger models - 50-70 ml and even 90 ml). Warm up the cup before filling.
  • Ristretto requires the same amount of ground coffee beans per serving as espresso (about 7 g), but less water content (15-20 ml). Therefore, the smallest cups are used for it, and most often transparent containers without handles, reminiscent of stacks, are used.
  • Cappuccino is a combination of 3 components of milk, coffee, thick milk foam in equal proportions, with which the vessel is filled to the brim or even higher. Due to the increase in liquid, a cup of 170 to 220 ml is required. The smaller cappuccino container is suitable for espresso with cream, double (doppio) or with an increased amount of water during brewing (lungo).
  • Americano is a type of double espresso, which after preparation is diluted with hot water in a 1:1 ratio. The final product takes 120-180 ml. Therefore, cups with a capacity of 200-220 ml are required (the surface of the coffee should not reach the edge of the mug).
  • The latte recipe consists of a third of espresso, which is sandwiched between layers of milk and plenty of foam. Served in Irish glasses, tall glass glasses or cups from 220 to 320 ml.
  • For coffee cocktails (frappuccino, mochaccino, raf, freddo, etc.). They are not coffee in its pure form; they are prepared on its basis, with the addition of milk, alcohol, vanilla, syrup, ice cream, juices, chocolate and other ingredients.

They are the most demanding on the volume of dishes, the minimum capacity is 220 ml, containers of 350-500 ml are more often used. As a rule, such coffee options are served not in classic cups, but in cocktail glasses or glass glasses.

For professional or home coffee tasting, white dishes are recommended.

Differences between Americano and espresso coffee

Many consider espresso and Americano to be similar recipes. They are indeed similar in composition, however, different methods of preparation turn them into two drinks with different tastes and properties.

  • Americano is prepared on the basis of espresso, which is diluted with hot water to a volume of 150-180 ml. That is, for 40 ml of espresso add three times more hot water.
  • Americano has a mild flavor and low caffeine content per serving.
  • When strong and rich espresso is diluted with water, the sourness comes out much brighter, and the bitterness and strength of the taste are washed out. Therefore, in Americano you can feel fruity and woody flavors, which clearly appear in diluted espresso.
  • Americano is served in large cups; it is traditionally served with milk and sugar, which enhance the weak taste of the drink.
  • Espresso is much stronger, more expressive, richer. It has a small volume, unlike Americano.

Features of choosing coffee cups

When choosing a container for coffee, you should consider what type of drink you intend to drink from it. Depending on this, the shape, volume of the cup and the material from which it should be made are selected. Many global coffee brands produce their own lines of tableware. Of course, in compliance with all classical requirements and consumption standards. So, if a person prefers a particular brand of coffee, then he can choose a cup from the same manufacturer.

Material of manufacture

For basic coffee drinks, it is recommended to use ceramic and porcelain dishes (ideally with the addition of kaolin). It is durable, practical, and easy to care for. And it will last longer than glass.

Ceramics and porcelain are able to maintain the temperature of the liquid for a long time, and also conduct oxygen (due to the porous structure), continuing the extraction process even after serving. Depending on the type of drink, the shape of the cups is:

  • cone-shaped - for espresso, lungo, ristretto, maintains the temperature of the liquid for a long time;
  • with a wide top - for cappuccino, to put cream or milk foam, draw a design on it;

Coffee brewed in moka: When brewed in moka, extraction occurs using steam pressure. It's technically not a traditional espresso because the pressure isn't strong enough, but it's the best alternative to an espresso machine if you want to brew espresso.

Instant Coffee: Coffee that is brewed in huge volumes and then dried either by cold brew or spray drying. Instant coffee has a negative reputation in specialty coffee circles because it is often made from cheap, low-quality beans.

Hybrid coffee brewing method

This is a relatively new method of preparing coffee that cannot be classified into either of the two categories. It cannot be classified as a filter preparation method: although the hybrid method involves filtration, it also includes extraction under pressure.
