Iced coffee: what is it?

The name of the drink comes from the French verb glacé, which in exact translation means “iced, frozen”, and in a more approximate translation means “chilled”.

The origin of the recipe is unclear. Some experts believe that mountainous Austria became the birthplace of cold coffee, others attribute the recipe to French cuisine. It can be reliably said that iced coffee was popular in Parisian coffee shops back in the first quarter of the last century.

From Europe, coffee with ice cream moved to America and Japan. Today this recipe remains popular. Each country has its own variations of the recipe.

Composition of iced coffee

Classic coffee glace is a type of cooling dessert that consists of cold coffee with a scoop of ice cream. Approximate proportions are 3 parts coffee to 1 part ice cream.

  • Coffee can be espresso or brewed according to an oriental recipe. In modern coffee shops, glace is made on the basis of espresso, but the drink was prepared long before the dominance of coffee machines, using oriental coffee.
  • It is better to take vanilla, cream or ice cream ice cream so that fruit or berry flavors do not overwhelm the coffee bouquet.
  • Real ice cream is made from chilled coffee, but some people prefer to put ice cream in hot coffee, creating a very controversial version of the classic recipe.
  • Sugar can be added to the drink as desired, but this should be done before the coffee has cooled, otherwise the grains will not dissolve.
  • An alternative to sugar can be syrup. It is often added as a sweetener or to enrich the flavor of the drink.

History of Glace

It is believed that the glace recipe was born in Austria: at the end of the 19th or beginning of the 20th century. It so happened that one of the capital’s coffee shops ran out of cream, and the visitor was served Viennese coffee with ice cream. The guest liked the drink so much that from then on he ordered only this type of coffee. Be that as it may, in the 20th century, when technology made it possible to make ice cream cheaper, ice cream became very popular all over the world.

There were some difficulties with writing this word in Russian. Linguists have long argued about the correct name for the drink: glace or glasse. For some time, spelling dictionaries allowed both spellings, but in recent editions the “glase” option is recognized as correct.

Iced coffee recipes

There are many ways to prepare iced coffee, some of which have become canons for bartenders and baristas.

Classic iced coffee

What will you need?

  1. A serving of espresso or Americano is 90 ml.
  2. Ice cream – 1 part to 3 parts coffee from the volume of the drink. If you take 90 ml of coffee, then you will need 30 grams of ice cream. If you decide to limit yourself to a small portion of espresso of 30 ml, then take 10 grams of ice cream.
  3. If you need to sweeten your coffee, add sugar, honey or syrup to the hot drink to dissolve.

How to cook?

  • Let the coffee cool down well. The drink should have a temperature of approximately 10-15 degrees.
  • Pour cold coffee into a glass goblet or narrow cup and carefully place a scoop of ice cream on top.
  • Decorate with chocolate shavings, topping, and almond flakes.

Iced coffee with egg yolks

What will you need?

  1. Coffee brewed at the rate of 10 g. powder per 150 ml of water. A serving of Americano is also suitable for the recipe.
  2. Powdered sugar - 3 tablespoons (can be replaced with 1.5 tablespoons of sugar).
  3. Egg yolks 2 eggs.
  4. Ice cream – 40 gr.
  5. Topping – caramel or chocolate – 10 g.

How to cook?

  • Brew and cool coffee. It is enough that it is just warm, not hot.
  • Separate the yolks from the whites.
  • Grind the yolks with sugar or powder until white.
  • While stirring, pour coffee into the yolk mixture.
  • Place the mixture in a water bath.
  • Stirring, cook for about 12-15 minutes until the mixture thickens.
  • Remove from heat and pour the finished mixture into a tall glass.
  • Cool to room temperature.
  • Place ice cream on top.
  • Drizzle with topping. You can steal nuts.

Iced coffee with cream

What will you need?

  1. A serving of espresso coffee or strong coffee brewed in a cezve – 100 ml.
  2. Ice cream – 50 gr.
  3. Whipping cream (at least 33% fat) – 3 tbsp. spoons.
  4. Topping – caramel, chocolate, berry – 1 tbsp. spoon.
  5. Chocolate or nut chips - 1 teaspoon.
  6. Finely crushed ice - 1 tbsp. spoon.

How to cook?

  • Brew coffee, cool to 10-15 degrees.
  • Place ice at the bottom of a glass and tall cup and place ice cream on it.
  • Gently pour coffee down the side of the cup.
  • Place whipped cream on top.
  • Drizzle with topping and sprinkle with chocolate or nut crumbs.

Iced coffee cocktail (for persons over 18 years old)

The recipe for glaze without ice cream, but with alcohol makes it closer to cocktails.

What will you need?

  1. Chilled coffee (espresso or brewed in a cezve) – 50 ml.
  2. Liqueur (cream, orange or apricot) – 25 ml.
  3. Syrup – 1 tbsp. spoon.
  4. Finely crushed ice - 2 teaspoons.

How to cook?

  • Place ice at the bottom of the glass.
  • Pour syrup on top.
  • Pour chilled coffee into a cup.
  • Add alcohol.

A coffee-glazed cocktail can also be prepared with ice cream, putting it on ice instead of syrup. In this case, it is better to prefer a creamy liqueur - Baileys or Irish Cream.

The main ingredient is black coffee, which can be prepared using any convenient method.

The remaining ingredients for dessert are selected according to taste: some people prefer vanilla ice cream, while others prefer chocolate.

Coffee selection

Thanks to ice cream, the taste of the coffee drink becomes soft, and the bitterness becomes invisible. It is best to use ground coffee beans for preparing dessert, which have been standing for more than 10-14 days and have already lost their freshness and aroma.

Inexpensive mixtures of coffee beans or an instant version of the product are also suitable for dessert.

Those who like a mild coffee taste are recommended to use Arabica beans, but those who prefer bitterness should use the Robusta variety.

Water

Tap water contains large amounts of chlorine and other chemical impurities that negatively affect the taste of the dessert. Therefore, to prepare high-quality glaze, it is recommended to use filtered or bottled water.

Ice cream

It is advisable to choose a classic creamy or chocolate ice cream. But to reduce the calorie content of the product, it is also possible to use milk ice cream.

If you add creme brulee flavored ice cream to the drink, the dessert will acquire a pleasant caramel-chocolate hue, but strawberry or pistachio balls will add fruity notes of aroma and freshness to the drink.

Making iced coffee at home: a universal recipe

The drink can be easily prepared at home.

What will you need?

  1. Ground coffee – 10 gr. (2 teaspoons).
  2. Water – 100 ml (1/2 cup).
  3. Ice cream (sundae or cream) – 30 gr.
  4. Chocolate chips, nut crumbs for decoration - 1 teaspoon.
  5. Thick syrup - 3 teaspoons.
  6. Crushed ice – 2 teaspoons.

How to cook?

  • We brew coffee at the rate of 2 teaspoons of coffee per 100 ml of water.
  • Strain and leave to cool.
  • Place finely crushed ice at the bottom of a glass goblet and pour 2 teaspoons of syrup on top.
  • Pour in well-chilled coffee.
  • Carefully spread the ice cream.
  • Pour syrup on top, sprinkle with chocolate and nut crumbs.

How does the composition change calories?

The calories in coffee ice cream depend on the type of ice cream used and the amount of sweeteners and additives.

Calorie content per 200 ml serving:

  • - without sugar 204.5 kcal
  • - with 5 g sugar 224 kcal
  • — with 5 g sugar and milk 270 kcal
  • — without sugar, with syrup or liqueur 270 kcal
  • — without sugar, with liqueur, syrup and whipped cream 295–365 kcal (fat content of cream)
  • — with 5 grams of sugar and with cream up to 295 kcal

Subtleties of making iced coffee

The recipe leaves a huge scope for creativity, but some subtleties of preparation must be observed.

  • If coffee for a recipe is brewed in a cezve, be sure to filter it so that small particles do not end up in the finished glace.
  • Most recipes will require well-chilled coffee. Let it cool at room temperature, and then put it in the freezer for 10-15 minutes.
  • For this recipe, it is better to brew coffee from medium roast beans to avoid excessive bitterness and astringent notes in the finished drink.
  • Recently, alternative methods of brewing coffee in a Chemex, French press or pour over have begun to gain popularity. This coffee can also be used to make iced glass; fruit flavors go well with it, especially currant and orange.
  • If you use toppings to make iced coffee, you can try combining different flavors in one recipe - cherry and chocolate, raspberry and cream, currant and vanilla.
  • The invigorating effect of iced coffee is low, due to the cooling of the drink and the presence of ice cream and sweet syrups in it. They weaken the effect of caffeine.

Useful tips

  1. If you use a Turk to make coffee base, be sure to strain it. If small particles are not removed (see coffee grind levels), the process of drinking the drink will be disrupted.
  2. The operating rules for refrigerators do not allow hot food to be placed in them. As you may have noticed, in most of the recipes above, you need to cool the coffee first. First you need to let it cool to room temperature, only then put it in the refrigerator. Otherwise, you risk that the equipment will fail.
  3. As an example, we always include chocolate topping and syrup. This is not the final option - you can use additives of any flavors based on your preferences.
  4. You won't be able to cheer yourself up by drinking a glass of iced coffee. The caffeine content and its effect are reduced due to the preparation method and the ingredients contained (see products containing caffeine).

Calorie content of iced coffee

The drink is a dessert drink and has a high calorie content. Exact nutritional information depends on recipe ingredients.

Classic iced coffee without sugar, with 30 g. ice cream and 2 teaspoons of syrup has a calorie content of approximately 110 kcal. Adding chocolate and nut topping increases the calorie content to 150-160 kcal.

Iced coffee made with egg yolks has a calorie content of about 250 kcal, sprinkles and decorations will raise this figure to 300 kcal.

Iced coffee with alcohol has a calorie content of about 120 kcal per 75 ml serving.

Each spoonful of sugar increases the calorie content of iced coffee by 20 kcal.

For glaze, creamy ice cream tastes better. Ice cream with chocolate or creme brulee also gives a unique glaze. Less-calorie milk ice cream is also suitable, but such dessert coffee will not be as tasty.

In any case, it’s hard to call the glass a drink for dieters. Therefore, there is no point for ice lovers to bother with counting calories. After a portion of ice cream, you should forget about dinner or work out longer.

  • alcoholic tincture, cognac, liqueurs, whiskey;
  • grated, melted chocolate, high-density cocoa;
  • candy crumbs;
  • citrus zest;
  • bananas, berries;
  • cinnamon, ginger, cardamom;
  • coconut and almond flakes.

With chocolate syrup and candies

Ingredients:

  • high quality coffee – 2 tsp,
  • painstakingly chilled ice cream – 70 g,
  • chocolate syrup – 60 g,
  • sweet powder - to taste,
  • cream - ? Art.,
  • lollipops with creamy flavor – 20 g.

Manufacturing:

  1. Any convenient method for brewing strong coffee. Cool it until warm.
  2. In a separate bowl, beat very thick cream, adding sweet powder as you go. It is convenient to use a mixer or blender for this.
  3. Place the ice cream in a suitable glass. Drizzle chocolate syrup on top.
  4. Pour the no longer hot coffee into the remaining ingredients in a narrow stream.
  5. Top portions with whipped cream.
  6. Grind the candies. Sprinkle them over the finished treat.

Serve immediately.
