Chemical composition of grains

Many people believe that bitter coffee is a consequence of a large amount of caffeine, but it is not the only one that creates bitterness. There is also chlorogenic acid (from the word “green”), which is much more inside – as much as 8%. Light or medium roast is the best option

The next important factor affecting the bitterness of coffee is the degree of roasting. And here we come back to chlorogenic acid. The more coffee is roasted, the higher the percentage of its transformation into even more caustic and bitter cinchona.
