  • Hazelnuts – 40 g;
  • Water – 200 ml;
  • Granulated sugar – 2 tsp;
  • Cinnamon – ½ tsp.

Cooking method:

  1. Before preparing the treat, grains and nuts must be properly fried. This can be done either in the oven on a baking sheet or in a dry frying pan.
  2. After roasting, grind the grains and grind the nuts until they become dusty.
  3. Pour the resulting mixture with water and place in a pot over low heat.
  4. After boiling, strain the drink, add sugar and pour into cups.
  5. The finished delicacy prepared in this way has a pronounced nutty aftertaste. Hazelnuts are a classic addition to coffee drinks, but you can experiment with other types, and even hazelnuts.

Which is correct: glyase or glyase?

The same question arises in the case of latte. However, if with it everything is clear - the stress falls on the first syllable (by the way, we have already written about this), then with glyase everything is a little more complicated.

Despite its Austrian origin, the drink gets its name from the French word glace, which means “icy, frozen.” The emphasis in it is placed, as is customary in French, on the last syllable, that is, glace is correct. But that is not all.

In Russia, until recently, the spelling “glace” was accepted. However, according to the most recent version of the spelling dictionary of the famous linguist V.V. Lopatin, the spelling “glase” should be considered correct. However, if you still write this word with two “s”, no one will judge you.

Nut drink for those with a sweet tooth

For those with a sweet tooth, there is a unique recipe for making an invigorating drink. To create it, nut topping is used.

  • Finely ground grains – 3 tsp;
  • Milk – 100 ml;
  • Coffee syrup – 20 ml;
  • Whipped cream – 30 ml;

  1. Boil the ground grains in a Turk and strain.

  • Ground grains - 3 tsp;
  • Nutmeg grains – 2 tsp;
  • Cinnamon – 0.5 tsp;
  • Water – 300 ml;
  • Cream – 150 ml;
  • Egg yolk – 1;
  • Granulated sugar – 3 tsp.

Home cooking:

Mix ground grains and nuts in a Turk, get strong espresso, add a little cinnamon. While the espresso is boiling, beat the egg yolk with sugar, preferably brown coffee sugar. Heat the cream in a separate container, then stir in the raw yolk, beat and bring to a boil. Pour the finished treat into cups, top with a mixture of cream and sprinkle with the rest of the ground nutmeg. The hot delicacy should be served on special occasions and to the right guests, then you are sure to leave a lasting impression.

Subtleties of cooking

When preparing and serving oriental coffee, several important rules should be followed.

  • Coffee is brewed in an oriental style in a cezve, which our compatriots more often call a Turk. It is a copper vessel with a wide bottom, which narrows towards the neck, then expands again. The vessel is equipped with a wooden handle so that it can be lifted without getting burned. Cezves can be designed for several servings, but those in which you can make only one serving of coffee are considered traditional. It is believed that the most delicious drink is obtained in a Turk coated with silver on the inside, but this is no longer an essential requirement.
  • Coffee is stored in beans, grinding them just before pouring into the coffee pot. This is due to the fact that the esters that give it a charming aroma quickly evaporate from ground coffee.
  • Coffee should be ground for brewing in a Turk as much as possible, almost into dust. After all, the finished drink is poured into cups without straining. If the coffee is not ground fine enough, it will float on the surface and grind on your teeth, spoiling all the fun.
  • When brewing coffee in the oriental style, pour cold water. It is believed that the colder it is, the better the coffee will have time to open, the more aromatic and tastier the finished drink will be.
  • Water for oriental coffee needs to be soft, without impurities. If you don’t have the opportunity to get spring water, use a filter or buy already purified and softened water in the store - oriental coffee will require very little of it.
  • When preparing oriental coffee, you cannot let it boil. Therefore, it is cooked on sand or over very low heat. In the first case, at home you can use the following method: pour salt mixed with sand into a deep frying pan, immerse the Turk in this mixture and place the frying pan over very low heat. As soon as you notice that the cap begins to rise, remove the Turk from the heat. When the foam subsides, continue heating the Turk. The cap should rise three times - only after this the coffee is considered ready.
  • The foam from the coffee is not thrown away or settled - all the taste is in it. It must be removed with a spoon and placed at the bottom of the cup. Then the coffee itself is poured into the cup, always along with the grounds. It is permissible to put the foam not on the bottom of the cup, but on top, removing it with a spoon before pouring the drink.
  • There is an opinion that oriental coffee is meant to be bitter. This is a common misconception - in the East there are traditional recipes for sweet and very sweet coffee. For example, it is impossible to make Arabic coffee without sugar.
  • You can add various herbs and spices to oriental coffee. Some recipes require them. In this case, there should be very little of them, because they are added not to kill the smell of coffee, but to emphasize it. These spices can be cinnamon, cardamom, pepper, vanilla, ginger. Other options are used less frequently.

A glass of cold water must be served with oriental coffee. It is needed in order to better feel the taste of the drink. Therefore, first take a sip of water, and then a sip of coffee. If sugar is not served with coffee, then the spoon is also not placed, and the water is placed on the left. If you decide to put a sugar bowl on the table, then it will take the place on the left, and the glass of water will move to the right. In this case, a complete coffee set is placed on the table. Oriental coffee is poured directly at the table. They drink it from small ceramic or porcelain cups. Serving oriental coffee in glasses or tea cups is considered bad manners.

Nut mousse for coffee

In the summer heat, you want to try something new and unusual. New trends in cooking are reflected in the preparation of coffee desserts. But is it really worth choosing between a cup of your favorite drink and nut mousse?

You can professionally prepare real nut mousse at home. To do this, prepare:

  • Instant coffee – 3 tsp;
  • Ground coffee – 2-3 tsp;
  • Milk – 30 ml;
  • Boiling water – 50 ml;
  • Walnut – 50 g;
  • Cane sugar – 70 g;
  • Eggs – 4 pcs;
  • Crushed ice - 4 cubes;
  • Cream – 200-300 ml;
  • Chocolate/coconut chips, cinnamon as spices.

Cooking method:

  1. Dilute coffee with hot water, sugar, crushed nuts, and yolks. Beat all incidents with a mixer until smooth.
  2. Place the prepared mixture in a water bath and continue whisking until thickened.
  3. In a separate bowl, whip the cream and add to the rest of the mixture (pre-cooled).
  4. Apply the resulting mousse on top of the prepared chilled Americano with milk. Add ice.
  5. Decorate the resulting delicacy with chocolate/coconut shavings and cinnamon to taste.

How to make glace at home

Classic recipe

For preparation you need: 90 ml of coffee, brewed in any way, and 30 g of creamy ice cream (or in the amount you like). We, of course, advocate for espresso freshly brewed in a coffee machine or coffee prepared in a cezve, but if you only have instant coffee left at home, don’t worry - that will do. After all, frappe, also a very popular cold coffee drink, is traditionally made from “solvent” in Greece.

To serve you will need: a tall transparent glass (although it will be delicious in a regular ceramic mug) and a long spoon for stirring. In coffee shops, glace is often served in dishes for Irish coffee - glass glasses on a stem, with a handle on the side.

The finished coffee is cooled to about 10 degrees, and then a scoop of ice cream is placed in it.

However, remember that if you are watching your figure, it is better to choose a different type of coffee - for example, espresso or Americano with zero calories. The energy value of a glass of ice cream at McDonald's is 123 calories, and a “homemade” glass of ice cream, in which ice cream and sugar are not spared, can already contain more than 170 kcal.

Recipe for adults

An alcoholic variation of glace involves adding 15–20 ml of liqueur or cognac. Cream, chocolate, nut and orange liqueurs, cognac, whiskey or rum go well with coffee and ice cream.

"Pleasure"

Lovers of exotic fruits like coconut will enjoy the exquisite drink “Pleasure”. To make it, you will need approximately 150 ml of ready-made coffee, for the preparation of which it is better to mix walnuts with coffee beans. You also need 3 types of liquor:

The finished drink is poured into a tall glass and decorated with whipped cream on top, on top of which you can sprinkle coconut flakes to taste.

Cooking in Turk

Components:

  • heavy cream;
  • ground robusta beans;
  • sugar;
  • black chocolate.

First you need to prepare the “sweet” ingredient well. It should be thoroughly beaten with a mixer for 3 minutes. Add granulated sugar to the cream and continue whipping for a few more minutes. Place the preparation in the refrigerator to infuse.

Fill the Turk with ground robusta and water and place it on the stove. While the coffee is brewing, grate the dark dark chocolate.

Take a tall glass goblet and fill it with a fresh drink and whipped mixture. At the last stage, add chocolate chips. You can also use ground cinnamon for decoration.

The spice is not recommended for use in case of stomach ulcers and gastritis, liver or kidney diseases; sometimes it provokes irritation of the gastric mucosa, nausea, gas formation, abdominal pain; for this reason, the spice should not be introduced into the diet for diseases of the gastrointestinal tract.

Cassia (the so-called Chinese cinnamon, which has a low cost) contains coumarin, a substance that, when consumed in large quantities, damages the liver. An overdose causes weakness, headache, and stomach discomfort.

Ceylon cinnamon can be consumed when breastfeeding to improve milk production. You should first consult with your doctor, as in rare cases the spice provokes an allergic reaction in the baby.

Amaretto


A drink with the addition of liqueur creates a festive mood and can be a wonderful addition to dessert.
This additive has a light taste and aroma of almonds, reminiscent of the bouquet of the famous liqueur of the same name.

The almost imperceptible bitterness of almonds complements coffee drinks with added coffee well: latte, cappuccino, macchiato. The taste of Amaretto syrup is clearly visible when added to strong espresso.

Contraindications to the use of syrup are diabetes, obesity.

  • Mix everything and pour into the Turk. Pour the mixture with water and put on fire.
  • While the mixture is boiling, whip the cream and add cinnamon.
  • When the mixture in the Turk boils, remove the pot from the heat and pour the coffee into the cup.

Recipe with nutmeg and yolks

For those who want to get a completely new taste of their usual coffee, we offer a recipe with egg yolk and brown sugar. It will require a little more time, ingredients and ingenuity from you, but the result will please even the most sophisticated gourmets.

  • Take a tablespoon of brown sugar, one egg yolk, 100 ml of cream, 200 ml of freshly brewed coffee, a teaspoon of ground nutmeg.
  • Beat the yolk with sugar.
  • Heat the cream without bringing it to a boil, add the yolk in the process.
  • Pour the resulting sweet yolk-cream mixture over the drink and sprinkle with nutmeg.

Coffee with nutmeg can be prepared in different ways. The main thing is that the coffee drink does not turn into a hallucinogenic mixture, because nutmeg is an active psychedelic. Follow moderation and experiment safely!

For this recipe, coffee is brewed as usual. Below is just one traditional option. You can use another one, depending on your taste.

Ingredients (for two small cups):

  • 120 ml water;
  • 2 tsp. freshly ground coffee;
  • sugar to taste;
  • 1 tsp. peeled pine nuts.
  1. Roast the nuts over low heat until lightly browned and fragrant. 4-5 minutes is enough for this. The surface of the kernels will become glossy - this is the release of the oil included in their composition.
  2. Pour coffee into a heated pot and heat for a few seconds over low heat.
  3. Add sugar.
  4. Pour cold water and stir. Cook over low heat.
  5. When foam appears, carefully remove it and place it in preheated cups. Stir the liquid.
  6. Repeat the previous step twice.
  7. As soon as the drink begins to rise, immediately remove from heat. Do not allow it to boil under any circumstances.
  8. Add roasted pine nuts to the brewed coffee. To enhance the aroma, press them down a little.
  9. Pour the drink into cups. It is not necessary to strain; after the nuts lie at the bottom, they will be saturated with liquid, become soft and acquire a coffee aroma.
