What is cappuccino coffee? Features, composition, types and how to prepare the drink

February 13, 2014 Varieties and recipes

The word cappuccino comes from the Italian cappuccino (translated as capuchin). This is a milk-based coffee drink, which is often added with syrup and a beautiful milk foam on top. Italians drink cappuccino mainly at breakfast. Cappuccino has become widespread throughout the world.

It is believed that coffee with milk was invented in 1685 by a certain Mr. Monin from Grenoble. The name of the drink supposedly comes from the Capuchin monastic order due to the similar color of the cappuccino and the Capuchin attire - their cassock.

What is cappuccino

Several hundred years ago, in an Italian monastery, Capuchin monks invented the first recipe for cappuccino coffee. It was extremely simple, because it consisted only of freshly brewed coffee and a portion of fat goat milk. Since then, many options for preparing the drink have appeared, and in the literature you can find dozens of different recipes that involve the inclusion of a variety of ingredients.

In the classical sense, cappuccino is coffee that consists of 1 part frothed milk, 1 part strong espresso and 1 part fluffy and thick milk foam. Different recipes may contain other ingredients, such as chocolate, vanilla, syrup, sugar and others. There are also many preparation technologies; not only the taste and appearance of the drink, but also the name, depend on them.

The composition of cappuccino coffee may vary depending on the region of preparation. But foamed milk is always and everywhere present, and this is not an easy tribute to the recipe. The thick milk foam covering the espresso layer does not allow the aroma of the drink to dissipate, which means that until the very last sip it will be as rich as freshly prepared. Since milk makes up on average more than half of a serving of cappuccino, and it is taken mainly from fat, the average calorie content of the drink can be 60 kcal per 100 grams. The calorie weight can be reduced if you do not add sugar, or if you prefer low-fat milk, but then you will not get a thick milk foam.

Art latte
Art latte is an art that originated in Italy, where coffee is best understood.

Not long ago, a new type of culinary art became known to the world - art latte, which involves the highest skill in preparing cappuccino. It's not easy mixing ingredients correctly to get the perfect drink. This is the art of whipping milk and combining it with coffee so that the intended design appears on the surface of the cup, from a lily flower to a fern branch or a funny face. Among baristas, there are only a few specialists who are recognized as the best latte art professionals, because this skill takes years to learn.

Ideal drink parameters

Milk foam, as well as the ratio of coffee and milk in a traditional cappuccino is 1 to 3. But what should these components be?

Lungo coffee - what is it?

  • Espresso is strong coffee prepared in a coffee machine at the rate of 7–9 g of ground beans per 30–40 ml of water. The temperature of the drink is 88-92 degrees. Espresso should have dense foam, the thickness of which is 2-3 mm. The right drink has sweetness, sourness, bitterness and even saltiness, the balance of which creates the perfect taste.
  • The milk should be well foamed, and so that its texture is dense, fine-mesh without large bubbles. To do this, take pasteurized milk with a fat content of at least 3.5%, bring it to a temperature of 65 degrees and whip it in a cappuccino maker or French press.

The temperature of the finished drink when serving should be comfortable, that is, not exceed 70 degrees. This is the kind of drink that doesn’t burn your tongue and fully reveals its taste. The foam on the surface of the cup should be so elastic that when it is moved to the side with a spoon, it will quickly return, covering the espresso again. The taste of the drink should not clearly show any sweet milky notes or bitterness of espresso. These components should complement, and not overlap, creating a balance of black and white, creamy and tart.

Cappuccino is usually enjoyed, which is why it is served in wide, thick-walled cups, preheated in order to keep the drink hot longer. Great importance is given to decor, from decorative chocolate sprinkles to art latte designs. This is what the best cappuccino should be.

Adding toppings

You can diversify the taste of cappuccino using various toppings to suit your taste. Additives are added to the brewed coffee, mixed, and then milk foam is added. The following flavors go best with cappuccino coffee:

  • cinnamon;
  • caramel;
  • amaretto;
  • maple;
  • walnut;
  • vanilla;
  • chocolate.

By the way! If you added a cinnamon topping, you do not need to sprinkle this spice on the foam.

Add syrup to coffee based on the volume of the cup - 1 teaspoon per 50 ml.

Turkish cappuccino with chocolate

You can enrich your usual drink with hot chocolate. To do this, you need to boil it. For one cup you will need 35 g of dark chocolate and 30 g of milk:

  1. Heat the milk, but do not boil.
  2. Remove from heat.
  3. Grind the chocolate, add it to the milk, dissolve.
  4. Heat the mixture for two to three minutes over low heat (again, do not boil).

Prepare coffee and milk foam using the methods described above. Now we need to collect everything. You can simply mix coffee and chocolate and put foam on top. Or you can pour it in layers. In this case, it is better to use a transparent glass:

  1. The bottom layer is coffee. Add sugar if necessary.
  2. Using a second layer, carefully pour the chocolate over a wide knife (so that the layers do not mix).
  3. Place milk foam on top.
  4. Sprinkle with grated chocolate. If desired, you can add ground cinnamon.

Vanilla cappuccino coffee in Turk

Vanilla cappuccino coffee in Turk

Vanilla complements the taste of milk and coffee well. It is added to milk when frothing. There are two options - just with vanilla and with egg yolk.

At the first time, all coffee is prepared as usual. Vanilla is added to the milk to taste before putting the saucepan on the fire. Next, follow the algorithm described above. The result is a cappuccino with vanilla notes.

The second option is more interesting. The coffee component remains unchanged. But you’ll have to do some magic with the foam:

  1. The egg yolk is separated from the white.
  2. Two teaspoons of fine sugar are added to it (it is better to use powder).
  3. Beat until white foam.
  4. Add two tablespoons of milk (warmed, but not too hot).
  5. Beat everything until a fluffy, stable foam.
  6. Place foam on coffee.

By the way! If you are afraid of salmonella, add a couple of citric acid crystals or a few drops of lemon juice to the yolk.

Types, differences from other coffee drinks

Cappuccino is a mixture of milk and espresso. If you vary their proportions, you get varieties of this drink. This is how a macchiato is distinguished, where just a little milk foam is added to a cup of espresso, or a latte, where the main role is played by milk, not coffee. The difference between these drinks will be not only in taste, but also in presentation, as well as in the degree of tonic effect.

There are other types of cappuccino:

  • white, which is made by adding strong espresso to a cup of steamed milk;
  • black, prepare it the other way around, first pour in the coffee and then the milk.

The taste of cappuccino remains almost unchanged due to changes in technology, and the color of the drink can vary in intensity. To prevent the ingredients from completely mixing with each other, milk should not be brought to a boil, but rather whisked until thick and dense foam. In addition, the speed of pouring the coffee is also important; the faster you do this, the higher the likelihood of getting a “flaky drink.”

Cappuccino and latte
Two similar but different drinks

Cappuccino is sometimes jokingly compared to Americano. In the first case, 2 servings of milk are added to a serving of espresso, and in the second, 2 servings of water. Cappuccino differs from other drinks not only in its composition and taste, but also in its presentation. Typically these are 200–300 ml containers with a head of thick foam.

How many grams of coffee are in a cappuccino?

Coffee lovers are sometimes interested in how much product is contained in one serving of cappuccino coffee. A lot depends on your cup size and preference. Is it possible for pregnant women and children to have cappuccino?

The milk in cappuccino leads many people to believe that the drink has no restrictions on its consumption. The milk component does not replace the presence of a significant dose of caffeine in cappuccino . Milk only softens the effect of caffeine, reducing the severity of its effects.

The caffeine contained in cappuccino can have a stimulating effect on the nervous system, which is especially vulnerable in pregnant women and children. It is better for them to refrain from drinking cappuccino, as well as all other types of coffee-containing drinks, so as not to put their health at risk.

Reviews

Anna: I love cappuccino, but I rarely make it because it takes time, and it’s always not enough. I usually treat myself to this drink on the weekends, when I can leisurely enjoy its taste. I always take full-fat milk (once a week is fine...) and whisk it in a tall bowl. First I pour frothed milk into the cup, then strong coffee with sugar, and put foam on top, chocolate chips are a must. For me, this is a 2 in 1 product - both a drink and a dessert.

Marina: I’m constantly losing weight, since I haven’t managed to bring my weight to the ideal yet. And now I’m hooked on fat-burning cappuccino. It is far from a classic drink, but it promises an additional contribution to your figure. The taste is not very good, I add more water, but it really dulls your appetite, you can’t eat too much...

Inna: cappuccino is not coffee, you won’t get any energy from it.

Irina: I can’t cook it at home yet - you need patience to froth the milk. So I’m content with the cafe’s products, sometimes they are very tasty and I want to order more... especially with cake.

When and how to drink

In Italy they don't drink cappuccino after lunch. And in other parts of Europe it is considered a romantic drink, which is drunk in the evening. In the USA they drink throughout the day.

Cappuccino is served in a warm cup with a volume of about 200 milliliters. However, there are no hard and fast rules regarding volume when preparing at home. They drink right away. Traditionally, no sugar is added; the natural sweetness of the milk is sufficient.

Due to the high milk content, cappuccino should not be drunk with or immediately after meals.

Types of fresh baked goods are suitable for cappuccino: bun, croissant, donut. Cookies and desserts like tiramisu also make a good combination, but the drink is high in calories.
