Coffee experts call pour over the fundamental method of brewing coffee. The technology is based on a special design: a funnel with a filter through which hot water is poured. As a rule, a vessel is used into which the coffee is poured, but many people prepare this coffee directly into the cup. Then the method is practically no different from the preparation of filter coffee described below.
This same cooking method is called funnel or hario
However, professionals use an additional vessel, which allows them to saturate the coffee with oxygen and maintain its strength. The funnel itself plays a decisive role in the preparation of such coffee. Hario V60 (V - because of the V-shape, and 60 is the angle of the funnel itself) has already become a legend due to the fact that it speeds up extraction (the process of interaction of ground coffee with water).
Using a pour over coffee machine, coffee is prepared in no longer than 4 minutes.
Making cappuccino and latte
You can prepare cappuccino and latte foam in your kitchen, even without professional equipment. All you need is milk, a microwave, a milk jug and a manual cappuccino maker.
How to cook
For a classic latte or cappuccino you will need 20–40 ml of ready-made coffee (2-4 tablespoons) and 150–300 ml of milk. The proportions depend on what strength you like your drink.
- First you need to heat the milk. It is important that it does not boil. Then the milk will have a sweetish taste and it will be easier to whip it. You can heat it in the microwave or on the stove.
- Pour the milk into a tall container, lower the cappuccino maker and turn it on. Whisk the foam gradually, smoothly lowering and raising the cappuccino maker, this way you will achieve uniform whipping and can easily adjust the volume of foam.
To get a gentle foam for your latte, immerse the cappuccino maker a little deeper and whisk briefly. And for a dense and thick cappuccino foam, hold the cappuccino maker's spout higher, closer to the top edge of the milk, and whisk a little longer to form a dense foam on top.
After whisking, let the milk rest for 30-60 seconds and tap the cup on the counter a couple of times to release excess air from the foam and remove any bubbles.
The foam for a latte is different from a cappuccino: on a latte there is less foam and it is more uniform, but in a cappuccino the foam lies in a dense cap on top of the coffee
Filter coffee
Contrary to the popular belief that filter coffee is a relic of the past, modern city coffee shops stand out. Filter coffee is extremely popular as an alternative brewing method. The essence of preparation is to pour hot water through a special filter directly into a cup. The variety of filters is amazing: coffee shops use not only traditional paper ones, but also metal, fabric and even nylon. Another myth: classic espresso and filter coffee are identical. This is wrong. Unlike espresso with its density and layers, good filter coffee is clean, clear and smooth, allowing the true flavor of the drink to come out.
If something goes wrong:
- Acidity too high (coffee not brewed enough) → gradually increase the amount of clean water, or reduce the amount of coffee, or grind less.
- The taste has a lot of bitterness and a dry, rough aftertaste is felt (the coffee is overcooked) → reduce the amount of water, increase the amount of coffee or make the grind coarser. Any of these actions will help correct the taste.
- The coffee brews quickly → make the grind finer. And vice versa if the drink is prepared slowly.

Chemex
Chemex is one of the most popular ways to brew coffee. The principle of preparing a drink in a Chemex is based on pouring hot water over a paper filter. Before filling the filter with ground coffee, it is recommended to run it with water to get rid of the papery taste.
After pouring water, ground coffee is poured into the upper funnel
You should pour water carefully, using a thin stream of water, after which the drink will fill the reservoir within 3-4 minutes. Sometimes coffee lovers shake the Chemex after preparation to saturate the coffee with oxygen. Chemex is perfect for coffee lovers who appreciate fruit and berry notes in their drink.
A Chemex consists of a flask and a funnel connected by a wooden rim, which is wrapped with a leather ribbon

This method is based on manually pressing coffee powder filled with hot water through a paper filter using the syringe principle. Coffee experts fell in love with the AeroPress for the speed of preparing the drink and its final “purity”.
Experts recommend using water at a temperature of 80-90ºС
Coffee acquires a more pronounced taste without impurities and foreign tastes. This method is especially appreciated in megacities, where people are always in a hurry and at the same time appreciate quality coffee.
