Most people are used to drinking coffee with sugar, but on the island of Taiwan they decided to break these traditions and started drinking coffee with salt.
Those who have tried this unusual drink claim that it has a special taste that cannot be compared with anything else. A small pinch of salt softens the water and enhances the aroma, and also helps the coffee develop to its fullest. Some varieties have a sour taste, which can easily be compensated for with one gram of salt. Coffee with salt is usually served in small coffee cups; it is not strained and is drunk with grounds, which can be precipitated with two drops of cold water. Cold boiled water is served separately and washed down with coffee. It is also worth noting that a real drink can only be obtained from high-quality grains brewed in a copper or brass pot. Next, we offer you several proven recipes for coffee with salt, which are used by various peoples in all corners of the world. Now you can try something unusual and memorable. Algerian coffee with salt Ingredients: coffee - 2 teaspoons cold water - 180 ml granulated sugar - 1 teaspoon table salt - a pinch Pour 2 tablespoons of good coffee, sugar, salt into a Turk and fill it with cold, clean water. Place on low heat and, without stirring, wait until the foam rises to the top. Remove the coffee from the heat and carefully place the Turk in cold water for half a minute.

Coffee with cognac and salt Ingredients: finely ground coffee - 1.5 teaspoons boiling water - 1 cup salt - a pinch cognac - 1 teaspoon Brew coffee in the usual way, strain it and add salt. Pour in a spoonful of cognac and sweeten it a little if desired.

Turkish coffee with salt and pepper Ingredients: natural coffee - 1 teaspoon salt - a pinch black pepper - ¼ teaspoon butter - 2-3 g water - 180 ml Boil water in a Turk, add coffee and bring to a boil, then remove from the fire. Add black pepper to the coffee and put it back on the fire, repeat this procedure several times, at the end add butter and salt. Pour into a cup only when the grounds have settled.

Coffee with cinnamon and salt Ingredients: cinnamon – ½ teaspoon ground coffee – 2 teaspoons water – 200 ml coarse salt – 3 grains sugar – 1 teaspoon Pour coffee and sugar into the pot, add water and put on medium heat. When the drink starts to boil, add salt and cinnamon to it.

Creamy coffee with salt Ingredients: instant coffee - 1 teaspoon boiling water - 150 ml heavy cream - 3 teaspoons sugar - 1 teaspoon salt - 1/8 teaspoon vanilla - ¼ teaspoon First, make the creamy sauce, which We'll add it to coffee. To do this, cook the cream with sugar and vanilla in a small bowl until the mixture thickens. Make instant coffee, add salt and the resulting creamy caramel.

Original coffee with salt and orange Ingredients: natural coffee – 1 teaspoon orange zest – ½ teaspoon water – 150 ml orange juice – 1 teaspoon salt – a pinch granulated sugar – 1 teaspoon Pour salt, sugar and coffee, add hot water and bring to a boil. Add orange juice and zest to the finished drink. If desired, this can be replaced with orange liqueur.

Cooking process:

First, let's prepare the shortbread dough. To do this, grind the softened margarine with granulated sugar and then add the cooled eggs. Mix everything thoroughly. Dissolve baking soda in a small cup and then add to the dough. Stir. Next, add sifted flour until the dough takes.

Now you need to wrap the dough in cling film or a bag and put it in the refrigerator for at least 30 minutes.

At this time, let's prepare the filling. I used a food processor to prepare the filling. Place the halva, cut into pieces, into the processor bowl.

Then add cottage cheese and sour cream, mix everything thoroughly, I used a knife attachment. Then you can add sugar, but it seemed to me that it would be completely unnecessary here, although I love sweets, but cloying is already too much.

You can use any sour cream, it doesn’t matter here. I would also like to advise adding one egg to the filling, which must first be beaten with a mixer or whisk. This way the filling will harden faster and the pie won’t need to be refrigerated for as long.

Roll out the cooled dough into a thin layer. Now again, one point that I will now take into account: you must definitely cover the baking dish with either paper or foil, since the cake cannot be turned over, and it is simply impossible to remove it. Or, alternatively, use a springform pan.

I buttered the pan but didn't line it and had to turn the cake over. I did this quickly, but the top of my head was already quite a bit damaged. Line the greased pan with the rolled out dough until the edges are trimmed.

Fill the prepared form with the dough with the filling, carefully level the mixture into the form and now you can trim the edges of the dough, trimming them. I used the leftovers to make a lattice for the pie.

Now we send the form with the cottage cheese pie to the oven preheated to 180° degrees for 35 - 40 minutes.

Let the finished curd pie with halva cool completely, and then cut it into portions. Serve with a cup of freshly brewed tea.

Now I can definitely say that next time I will try to bake such a pie with peanut halva, it is very aromatic and tasty, so the aroma and taste of peanuts in the baked goods is guaranteed.

Are there any health benefits to adding a pinch of salt?

By drinking coffee, you are already reaping some health benefits. Gone are the days when coffee was touted as unhealthy; the latest study has come out and coffee is good for you. Coffee is packed full of antioxidants and much-needed nutrients like magnesium and potassium.

Research also shows that drinking up to four cups of coffee a day may help reduce the risk of developing some debilitating diseases such as Alzheimer's and Parkinson's.

Now let's get back to the salt.

Now drinking coffee throughout the day does have a slight negative effect, it makes you want to pee due to the caffeine in the coffee having a diuretic effect.

Yes, your cup of coffee potentially causes your system to flush out salt and if you don't keep your sodium chloride in control, your body could become depleted of this essential nutrient.

Research shows that drinking just four cups of coffee a day can flush up to 1,200 mg of sodium down the toilet, which, oddly enough, is about the recommended daily amount you should consume.

I know that the likelihood of you becoming deficient in sodium chloride from drinking coffee is low; we get salt in almost everything we eat, especially processed foods, so there's no reason for your levels to drop dramatically.

So let's get down to business. If you drink a lot of coffee throughout the day, adding a little salt to your coffee will not only take away some of the bitterness, but will also help keep your sodium chloride in check.

Why is salt added to coffee?

Sodium ions in table salt enhance the aroma of coffee and neutralize the excessive bitterness of low-quality or over-roasted beans. It was for this purpose that sugar and dairy products were originally used in Europe.

Salt also softens hard water, which also has a positive effect on the organoleptic properties of the drink - the sourness becomes less pronounced, the drink is balanced in terms of sharpness and softness.

Coffee with salt also restores the body’s salt balance, which is disrupted by excessive sweating in the hot climate of the Middle Eastern countries. It turns out tasty and healthy at the same time.

And of course, a traditional video recipe

There are hundreds of ways to prepare coffee. Coffee taste and aroma are combined with everything: with spices, seasonings, toppings, sweets. There are also very unusual recipes. Coffee with halva, for example, is much more reminiscent of an original dessert than a traditional coffee drink. It will appeal to everyone who likes to experiment and is partial to the dense, buttery tastes of oriental sweets. Today we will try to make coffee with halva, and at the same time, we will reveal a few secrets of professional baristas who have long mastered this recipe.

In order to prepare coffee with halva, we will need the following ingredients:

  1. Halva
. 50 grams will be enough for one small cup. If you are preparing a large portion, you can take 100 grams.
  2. Cream or milk
    . ½ cup or about 100 grams.
  3. Ground coffee
    . 2 teaspoons per serving.

The recipe for coffee with halva is not too complicated. Let's start with preparation. Mash the halva into fine crumbs. It is best to do this simply with your hands, or, in extreme cases, with a fork. Mechanical grinders of various kinds will be useless here, since halva is a product with a high fat content, and under the action of a blender, it does not loosen, but, on the contrary, is churned into a dense mass.

Heat the prepared cream and milk, but do not bring them to a boil, otherwise you will have to remove the foam that has formed.

Place the crushed halva in a tall container, pour hot cream or milk. Beat the resulting mixture. At this stage you can and even need to use a blender.

Advice from the barista

Brew regular black coffee using your favorite recipe. Our example uses a Turk, but espresso or another electric coffee maker product will work just as well.

Pour coffee into the prepared mixture. Let it sit for a few minutes and you can pour the drink into cups. Your coffee with halva is ready.

Advice from the barista

For lovers of dense, creamy, sweet flavors, as well as fans of oriental sweets.

Please note that when pouring halvicha crumbs with hot milk or cream, it reveals its taste brighter. Keep this in mind when choosing halva for your drink. Use only fresh product. Stale halva will give the drink an unpleasant aroma.

Those who watch their figure and count calories should take into account that halva is a fatty, high-calorie product. Therefore, in pursuit of a slim waist, use tahini halva. It has a lower percentage of fat, and a little less calories. Replace cream with skim milk.

If you follow all the recommendations, you can easily prepare this thick, sweet, slightly oily drink, which will add strength and warm you, lift your spirits and even satisfy your hunger. This cocktail is perfect for a bachelorette party or friendly get-togethers. It is not too hot and can be served in tall glasses with straws.

Oriental coffee - history and traditions, how to drink, recipes, preparation method

Coffee according to a traditional oriental recipe is brewed exclusively in a Turkish coffee pot. This is not a whim, because in order for the grains to fully impart their taste and aroma, they must be ground very finely.

The coffee maker filter is not able to pass such a fine fraction and will become clogged. There are several different oriental recipes. They mainly differ in additional ingredients - spices, which add flavor and also affect the human body through various chemical compounds.

Choose where to save the recipe:

For a true coffee lover, coffee always starts with the beans. Why? Because the most aromatic drink will come from freshly ground grain. Therefore, you should take as many coffee beans as you need to brew coffee for today. True, for most working women this approach becomes an outright utopia, because there is simply not enough time to grind coffee beans every day. So, if you decide to immediately grind more coffee, I think nothing bad will happen.

Ginger with turmeric

Turmeric is the most unique and healthy spice that gives your morning coffee a special aroma and unique taste. Two natural antiseptics - ginger and turmeric - are very popular in eastern countries. This coffee is consumed in hot weather to improve vitality. Organize a coffee ceremony and surprise your friends with your deep knowledge of the culture of the East.

What is oriental coffee?

Depending on the amount of sugar used during its preparation, this type of coffee can be bitter, sweet or very sweet. The quality of the grind and the amount of water and coffee create room for variation: the drink can be thinner or thicker.

Spices that are traditionally used to make oriental coffee: cinnamon, cardamom, cloves, nutmeg, black pepper, garlic, salt. They give the drink a unique “zest”.

When preparing coffee using the “oriental” method, it should never be boiled. You should not drink over-boiled coffee. Therefore, it is cooked over low, low heat, or even better, on hot sand, which will warm the coffee to the desired temperature, but will not allow it to boil. There are special devices for making coffee on sand.

Making Turkish coffee

Oriental coffee is prepared in a special roaster - a metal tray with high walls. Pure river sand is poured into it, which, when the fryer is heated, also heats up. They put the Turk in it, practically burying it. The Turk warms up quite slowly. But this is one of the main secrets of oriental coffee. The drink slowly reveals its properties under the influence of such heating.

In the absence of a special roaster, Turkish coffee can be prepared over an open fire, but only very low.

Freshly ground coffee beans, salt and sugar to taste are poured into the Turk and all this is filled with ice water. The Turka is placed on the fire and kept until foam appears. Then it is removed so that the foam settles and put back on the fire. Repeat this 2-3 times. Vanilla, jasmine, or cloves are added to the finished drink. But this condition is not mandatory.

How to cook at home

Over time, many varieties of raf coffee have appeared. For example, it is possible to take not only espresso as a basis, but also Turkish coffee, coffee prepared in a French press, in a coffee maker, or even instant coffee. Cream can be replaced with full-fat milk, and instead of vanilla sugar, cane and ground vanilla or vanillin can be added separately.

Making raff coffee is quite possible at home. In this case, you need to brew espresso in a coffee machine, coffee maker or coffee pot, and then mix it with the rest of the ingredients in the pitcher. Even in the absence of modern coffee machines, you should not refuse this cocktail. You can use a coffee pot and a regular whisk.

Strain the brewed coffee until the foam appears. Together with slightly warmed cream and other ingredients, beat in a blender until foam appears.

TURKISH COFFEE

Ingredients:

  • Coffee - 2 tsp. (with a slide)
  • Water – 120 ml
  • Sugar - optional
  • Spices - optional

Cooking method:

Grind the coffee beans or use ready-made ground coffee. For best results, grind your coffee very finely. If you have a choice, choose a manual coffee grinder over a mechanical one. Measure out the desired amount of water into the cup and add coffee. Classic Turkish coffee is a fairly strong drink, 1 tsp.

With a heap of ground coffee, only 55–60 ml of water is added, but at home the proportions can be varied slightly, adjusting them to your taste. Also try to select the proportions of water and coffee so that the maximum water level is up to the neck of the pot, not higher. The remaining free space is needed for the growth of coffee foam. If you prefer coffee with sugar, add that too. When adding any ingredients, be it sugar, water or spices, always add coffee last and do not stir the drink. It is also not customary to add sugar to a ready-made drink, since stirring sugar in a cup will destroy the coffee foam on the surface of the drink. Now let's move on to the most exciting moment - preparing the drink. It is believed that the most delicious Turkish coffee is obtained by brewing coffee on sand. At home, this can be done like this: take an old cast-iron frying pan, put a layer of small pebbles or stones on the bottom, and fill it with sand. The pebbles will give the sand density, and the sand itself and the thick walls of the pan will ensure smooth and even heating of the drink. Turn on high heat, and when the sand is hot, place a pot of coffee in the center. An alternative option is to prepare coffee on the smallest burner and minimum heat. Slowly but gradually the coffee will begin to boil. It’s difficult to give specific deadlines, but for me the process usually takes 6–7 minutes. During the heating process, a dense coffee foam forms on the surface of the drink. This foam cannot be stirred - it, like a lid, seals and holds all the aromas and tastes inside. Pour boiling water over coffee cups. When the water begins to boil, bubbles will form along the edges of the foam, and the water will begin to rise up - it is important not to miss this moment and not allow the coffee to boil and the foam to escape. Remove the turk, stopping the heating - the foam will settle immediately. If desired, scoop up some or all of the foam with a spoon and distribute among the cups. Return the container of coffee to the hot sand or burner and brew the coffee for another 20-30 seconds. During this time, bring the coffee almost to a boil 2 more times. Every time the coffee starts to boil, stop heating by lifting the pot, and then resume it again, returning it to the sand. Pour the finished coffee into cups, wait 40-50 seconds for the grounds to settle, and enjoy. Turkish coffee is ready. Drop everything else for a few minutes and enjoy its unforgettable aroma and taste. Bon appetit!

Classic cooking raf in the version of its authors

First of all, espresso coffee is prepared at the rate of 25 ml per 150 ml serving of drink. Then you need to add vanilla sugar to the cream and heat it. Mix the espresso with the hot creamy vanilla mixture and whisk everything well until foamy. It is best to whip with a cappuccino maker, but if you don’t have one, you can beat with a blender or just a whisk. In the latter option, you will have to beat for quite a long time. However, we need to achieve a light, airy foam, because it is this that gives the drink its vanilla-creamy taste and delicious coffee aroma. Rough coffee is served in a large cup or in a clear latte glass.
