Cheese coffee: a new trend that is rapidly gaining momentum

Asian roots?

Some argue that cheese coffee was born in Vietnam back in 1946: one day, the owner of one of the coffee shops in Hanoi, due to the lack of fresh milk, came up with the idea of serving coffee with foam consisting of eggs. To be more precise, it consisted of: yolk, butter, coffee powder, condensed milk, cheese and one more secret ingredient that is kept secret. All these ingredients were whipped into a strong foam and served along with hot or cold coffee. We even know the name of the coffee shop that is still run by the author of this recipe - Nguyen Van Dao. As you can see, this is exactly the case when temporary difficulties create an ingenious solution!

This type of coffee is served in many Vietnamese coffee shops and is very popular among tourists and the residents themselves.

Coffee recipes with syrup

Recipes for making coffee with sweet additives are varied. Here, every barista has his own secrets and preferences. It is traditionally believed that one teaspoon of thick syrup is enough for a standard coffee cup, and no more than two if the drink is diluted with milk or cream.

Classic chocolate coffee with syrup is prepared as follows:

  • a portion of a strong Turkish drink is brewed;
  • milk is heated separately (half the volume of the base);
  • the components are mixed and supplemented with 4 teaspoons of chocolate syrup;
  • A small portion of vanilla ice cream is placed on top.

Caramel latte with syrup:

  • a standard portion of espresso is brewed;
  • milk (half the volume of espresso) is whipped until foamy;
  • 2-3 tablespoons of syrup are poured into the bottom of the mug;
  • half of the whipped milk is poured in;
  • the base is poured;
  • the rest of the frothed milk is poured out;
  • All this is sprinkled with grated chocolate.

Drinks with other types of sweet additives are prepared in a similar way. The most important thing here is to make the right coffee, and a good syrup will do its job.

European tradition?

Others are quick to argue that cheese coffee is a long-standing European tradition that most likely came from Scandinavia. The northern peoples have kaffeost. That is, cheese coffee, which is traditionally served in a large wooden mug.

Scandinavians add leipäjuusto to coffee, which literally means “bread cheese” (in Russia it is more often called Lapland cheese). The cheese has a delicate texture and slightly sweet taste; it is traditionally made from reindeer milk, but on an industrial scale it is produced on the basis of cow milk. This cheese perfectly absorbs liquid and, in the case of coffee, absorbs the rich taste of the drink and becomes its highlight. It is thanks to this ability that it will receive the name bread. It also squeaks a little on the teeth, which is why the British received the nickname Finnish squeaky cheese. In stores it is most often sold in the form of flatbreads.

How to cook?

Before cooking, select:

  • suitable recipe;
  • variety of coffee beans;
  • type of cheese

Whipped cream, sugar, melted chocolate, milk, and peanut butter are used as additional components.

Coffee selection

Experts recommend choosing natural ground grains. However, you don’t have to choose high-quality Arabica beans because... additional aroma and flavor will be neutralized by adding cheese.

It is optimal to use affordable blends of Robusta and Arabica. The powder must be natural, because... when using a soluble product, the drink will become bitter; there is no refined aroma in this composition.

Cheese syrup

Recipes for coffee drinks include hard or processed cheese. The optimal varieties are those that have a milky, creamy taste and aroma. There should be no mold, smoked additives or flavorings. The following types of product are suitable:

  • ricotta;
  • Parmesan;
  • Swiss;
  • Russian;
  • Mozzarella;
  • feta cheese;
  • curd, etc.

The drink is prepared faster using a liquid product (cheese syrup), because the composition quickly dissolves in coffee. Processed cheese is chosen without flavorings or spicy additives.

Modern American approach?

However, despite the above-described options for cheese coffee, the drink in American traditions is now gaining particular popularity: when whipped sweet and salty homemade cheese, for example, mascarpone, is added to the coffee.

By the way, it all started with tea - one tea-coffee shop in Southern California presented visitors with an unusual tea: cold peach oolong, topped with whipped sweet cheese foam. The tea was called Just Peachy, which translates as “just peach.” The visitors liked the tea so much that it instantly spread across Instagram accounts and became quite famous. Everyone particularly commented on the velvety layer of sweet yet salty house cheese.

Then the owners decided to go further and released cheese coffee, which, unlike its tea brother, has a more bitter-sweet taste with notes of nuts and cocoa. Coffee also quickly became very popular - the owners joke that the well-known American coffee shop Starbucks will soon introduce this coffee to its menu.

Is flavored coffee healthy?

If you're serious about your health or want to enjoy the sweet taste of coffee syrups without worrying about excess calories, you'll be glad to hear that coffee is healthy!

All your favorite coffee drinks can be created using sugar-free syrups. Most major manufacturers produce products that do not contain this component. Just look for the words “Sugar Free” on the label. These bottles often have a blue label or cap.

Such syrups are made using a non-nutritive sweetener. Each serving is equal to one packet of sweetener.

Syrups do not contain gluten, so they can be consumed by people with allergies to it. Just in case, check the product label: it should have a blue or green symbol (or the letters “GF” in a circle or cereal in a circle with a line through it).

In Russia it is mainly known as cheese latte

There are a huge number of recipes on the Internet on how you can make this coffee at home, but if you want to not only drink a cup of drink, but also unwind in the cozy atmosphere of a quiet cafe, I advise you to check which coffee shops in your city can prepare this creamy miracle for you.

Traditional Macchiato - how to make it without the help of others?

Late Macchiato is not only a tasty, but also a unique drink due to its perfect presentation. The pronounced layering requires some skill, however, you can prepare a mini-masterpiece quite easily at home.

The traditional version of the recipe involves the introduction of:

  • half a glass of milk;
  • espresso shots;
  • cinnamon or chocolate chips for decoration.

To prepare a latte in this version, you will need to heat the milk without bringing it to a boil. The finished warm milk is painstakingly whipped into foam, transferred to a tall glass or cup, and proceed to brewing espresso. The finished coffee is added to the milk foam in a narrow stream, thus maintaining the formation of even layers.

The end of the milk-coffee drink is strong milk foam, which is decorated with chocolate or cinnamon. To make the foam stable, you should use the fattest milk.

If desired, sugar or honey is added to the drink, which is added specifically at the espresso brewing step, so as not to destroy the layers.

Pumpkin cocktail for Halloween

On the eve of the holiday, it’s really worth surprising your friends and family with unusual changes to the traditional latte or macchiato recipe. By preparing a pumpkin latte, you will be able to achieve an unusual combination of goods that, at first glance, do not combine well enough. The drink is combined from 50-70 grams of previously baked and crushed pumpkin in a blender with coffee and milk.

A little spice is added to the finished cocktail. This could include nutmeg, cinnamon and ginger. Before serving, the cocktail is heated, milk is added in the usual sequence, whisking beforehand. The cups used are mostly porcelain.

Toppings and syrups

Toppings are often mentioned in coffee and dessert recipes. These are various additives that give the dish additional flavor notes and make it more beautiful.

  • Don't miss: What spices and herbs can be added to coffee

The most common toppings for coffee are:

  • syrups;
  • grated chocolate;
  • chopped nuts.

Coconut flakes and waffle crumbs are also used as toppings for sweet dishes.

So, syrup is one of the popular toppings for coffee.

Method of use

Syrups go well with both hot espresso and cold coffee cocktails. There will be different ways of adding: maintaining layers, mixing and whipping.

How much syrup to add to coffee is up to everyone to decide for themselves, depending on their preferences. On average, per 50 ml of drink (the total volume includes espresso, milk and ice) add 1 teaspoon of liquid topping (5 ml). In this case, sugar is no longer needed. Those with a sweet tooth may want to add a little more.

With hot coffee

The espresso is stirred or even shaken with syrup and then milk is added.

If you are preparing a multi-layer cocktail, such as a latte macchiato, then the topping is poured into the glass first, and then milk and coffee are added. In this case, the glass needs to be tall and transparent so that the serving is beautiful.

Cold cocktails

If you shake ready-made espresso, milk, syrup and ice in a shaker, you get an excellent refreshing drink. This coffee cocktail is usually drunk through a straw.

Coffee shop ONE PRICE COFFEE: 60 shades of coffee at one price. Now also in Kovrov!

A stylish, democratic coffee shop originally from big cities has reached the very heart of Kovrov: the place ONE PRICE COFFEE opened right next to the square of the 200th anniversary of the city. The interior itself is invigorating, all the trends in the coffee industry and signature drinks are presented, and when you purchase 600 ml of any coffee, you will be given a dessert. What is so special about signature Brazilian coffee that both students and respectable gentlemen come to the coffee shop for? And most importantly, why “One price”? The prospect was the first to visit ONE PRICE COFFEE and is in a hurry to share his impressions of what he saw and tasted.

Still, globalization has its advantages! The ONE PRICE COFFEE coffee shop opened in Kovrov at Vatutina, 2B as part of the expansion of the popular franchise of the same name into the regions of the country.

According to Mikhail, the manager of the Kovrov coffee shop, there are already more than 250 coffee shops of the chain in Russia. ONE PRICE COFFEE is an officially registered trademark in Russia.

Large cities - Moscow, St. Petersburg, Sochi, Yekaterinburg, Novosibirsk - have already been developed, but it’s up to cities with a population of 50 thousand or more.

Local is the word you see on the sign, and “locality” in this case means precisely the desire for a cozy and intimate format of small towns.

But with the priority of quality control at every stage, centralization and standardization of the process within the franchise - from branded designer cups to requirements for the interior and staff training at the professional Barista Academy.

And of course, coffee. Yes, coffee is the pride of the franchise.

100% Arabica is exported from Brazil, roasted in our own coffee roasting center and delivered to all coffee shops in the chain.

What does this give the guest? The best part: justified expectations and confidence in quality. In other words, any flat white that you buy in a St. Petersburg coffee shop will not differ from a Kovrov flat white.

Let's try to list the main menu items. From the classics - espresso, Americano, cappuccino, mochaccino, latte. Modern trends include flat white, rough, matcha. From the relative exotic - author's recipes: “Cheese latte”, “Snickers cappuccino”. There are also very interesting seasonal offers from Neo Winter - for example, “Cream latte drunken cherry”, “Cappuccino citrus-cinnamon”. Hurry up and try it while it's winter.

A separate song - ready-made desserts for every taste: multi-colored donuts, variations on the theme of cheesecake, peanut crunch, carrot cake, raspberry-pistachio dessert, macaroon cakes...

There are also PP protein bars and gluten-free sweets.

In general, everything is fine here with alternative products. If you are lactose intolerant, choose from three types of plant-based milk (almond, coconut, banana). Enough caffeine for today? Try delicious thick cocoa or tea - for example, "Mandarin-Lemongrass" from the seasonal offer.

All this is not only tasty, but also photogenic. Look what cups were released for the New Year! Coming soon to all Kovrov’s Instagrams!

As Mikhail said, ONE PRICE COFFEE produces themed designer cups and other paraphernalia regularly and for various occasions.

It’s very convenient that One Price Coffee opened on the eve of the winter holidays - you can drop by here for a warm drink while walking in the 200th anniversary park. Although this story is not only about a quick coffee to go: it’s very pleasant to sit in the room even longer.

There is even a children's corner.

In general, the place is wonderful: the center, there is somewhere to park, mothers with strollers, couples are walking, young people are hanging out, two steps from the KSTA...

Tell me, is the poor student barred from entering the coffee shop? But no. And then we finally got to the main attraction of the coffee shop - the “Coffee at one price” concept. Let's figure out what this means.

The base figure here is 60. A 200-ml serving of any drink (except espresso and flat white) costs 60 rubles. If you want to increase the portion, just add another 60 rubles for each “step”: 400 ml of drink - 120 rubles, 600 ml of drink - 180 rubles. A serving of alternative milk and the simplest dessert also cost 60 rubles each. And the syrups are generally free. We said that the prices are very affordable.

In addition, the ONE PRICE COFFEE coffee shop constantly has a promotion: if you buy any large drink (600 ml), you get a free dessert for 60 rubles (and this is a standard piece of a classic cheesecake or donut!) True, you still need to drink 600 ml, but it’s definitely worth a try.

There is also the federal program ONE FAMILY. Download the ONE PRICE COFFEE application, accumulate “price lists” (1 price list = 1 ruble) and receive gifts for them (1 gift per day).

And as a first date with local coffee, we tried one of the bestsellers - Oreo Latte with cookie crumbs and whipped cream. It's not just a latte, it's a liquid dessert. Serotonin from the cocktail of caffeine and a decent dose of sugar played in the body for another two hours, no less. Do you lack joy in life and inspiration for achievements? This thing will definitely help stop a galloping horse!

Summary: outstanding place. Without unnecessary pathos, uplifting atmosphere, assortment and prices. We'll be regulars. And you come.

Where to buy syrup

The easiest option is to look for the best coffee syrups in a large hypermarket. However, the choice there is usually small. But there will probably be several bottles - and you can buy some of them to try. But you definitely shouldn’t expect professional brands.

It is worth paying attention to specialized online stores. There you can buy vanilla syrup for coffee (or any other) from various manufacturers (domestic and imported), at very interesting prices.
