  1. Pour 120 ml of milk into a saucepan, add cinnamon (or put a stick) into it and bring the mixture to a boil.
  2. Brew coffee (1 tablespoon of beans per 120 ml of water) in a Turk in the usual way, add sugar and strain.

All that remains is to mix everything in the desired proportion and pour into cups.

As soon as you notice that the cap begins to rise, remove the Turk from the heat. When the foam subsides, continue heating the Turk. The cap should rise three times - only after this the coffee is considered ready.
  • The foam from the coffee is not thrown away or settled - all the taste is in it. It must be removed with a spoon and placed at the bottom of the cup. Then the coffee itself is poured into the cup, always along with the grounds. It is permissible to put the foam not on the bottom of the cup, but on top, removing it with a spoon before pouring the drink.
  • There is an opinion that oriental coffee is meant to be bitter. This is a common misconception - in the East there are traditional recipes for sweet and very sweet coffee. For example, it is impossible to make Arabic coffee without sugar.
  • You can add various herbs and spices to oriental coffee. Some recipes require them. In this case, there should be very little of them, because they are added not to kill the smell of coffee, but to emphasize it. These spices can be cinnamon, cardamom, pepper, vanilla, ginger. Other options are used less frequently.

A glass of cold water must be served with oriental coffee. It is needed in order to better feel the taste of the drink. Therefore, first take a sip of water, and then a sip of coffee.
