We have already told you that several years ago we could not imagine a normal start to the day without a cup of instant coffee, and then we abruptly switched to natural coffee and we no longer drink instant coffee. However, having quite extensive experience in this matter, we can safely share our impressions of this or that instant coffee, since we have tried a significant amount of it. And one of those coffees that we used to like is “Carte Noire” or, in Russian, “Carte Noir”, which can be translated as “Black Card”. This drink is somewhat more expensive than other popular brands; it is considered premium, but is included in the average price category. Despite the fact that Carte Noire coffee was created only in 1978, it has already gained popularity in many countries around the world. To make Black Card coffee, 100% Arabica is taken, and its creator was none other than the Frenchman - Rene Monnier. We had a chance to try its classic instant version, which we bought in a glass jar, and even in bags for one-time brewing - we carried these with us in case of a strong desire to drink coffee somewhere away, where it is not found. “Carte Noire” I liked us with its tough strength without excessive sourness and invigorating aroma. By the way, as for single-serve bags, this coffee brand offers this drink in its pure form, without sugar, cream and other additives, that is, the same coffee as in the can, and we especially liked this, since at that time (years 5 ago) was rare. These are our personal impressions, and now let's get acquainted with the assortment offered by Carte Noir, especially since it contains not only instant, but also brewed coffee.

History of the Carte Noire brand

Everything is complicated with a brand.
They were a French company in 1978 and they have done well in the market producing some truly delicious Carte Noire coffees in a wide range. In 1982, the brand was bought by Jacobs Suchard, and from them to Kraft General Foods. In 1993, Kraft General Foods Europe and Jacobs Suchard merged to form Kraft Jacobs Suchard. In 2007, Kraft Foods became independent again and Carte Noire joined Mondelēz International. When Mondelēz merged with Jacobs Douwe Egberts, the Carte Noire coffee brand was bought by Lavazza.

In the 70s of the last century, he introduced the Grand-Mere coffee brand to the world, which was appreciated by most gourmets, and by the end of the 80s he developed the following varieties:

The creator of the brand is the French authoritative expert and gourmet Rene Monnier.

The idea to create his own coffee brand came to Monier in 1965. The first result of his labors was Grand-Mere coffee (translated as “grandmother”). The enormous popularity of the drink was facilitated not only by its excellent taste, but also by the funny advertising slogan that was quickly remembered by the public: “Grandma, make us aromatic coffee!”

Monier's "card" coffee collection was released in 1978, when he introduced not one, but three blends:

  • Carte Bleu ("blue card");
  • Carte Rouge (“red card”);
  • Carte Noire ("black card").

The latter became the most popular among the three new products. This was due to several innovative solutions: soft packaging, spectacular design and, of course, high quality of the drink. It is Carte Noire that is the leader of the Premium Arabica segment - a new quality standard has been created.

The first Carte Noire coffee was released in a soft black package with a transparent strip through which the beans were visible, and the drink was decorated with a golden ribbon that tied the package. The author of the idea of ​​​​creating such a memorable packaging was the famous image maker Jacques Segal. Before that, he worked on the image of world politicians.

The success of the brand lay not only in a successful presentation. Instant coffee Carte Noir

The easiest and fastest way to prepare a drink is the classic one.

Ingredients:

  • Carte Noire instant coffee – 2 teaspoons for a strong drink or 1 teaspoon for a weak one;
  • sugar;
  • water – 180 ml.

Preparation:

  1. To boil water. The ideal temperature for cooking should be 90 degrees. To achieve the required indicator, you can use a thermometer. If it is not available, boil water and then wait four minutes. During this time, the temperature will reach the required value.
  2. Pour the required amount of coffee into a mug and fill it with prepared water. Stir and leave for three minutes. True gourmets recommend not spoiling the taste of the drink with sugar, but if you need it, then add the sweet product after the drink has steeped.

Coffee beans Carte Noire

To make the drink taste perfect, it is first recommended to fry the grains in a frying pan without oil for about five minutes. Then grind them in a coffee grinder. It tastes best when brewed in a Turk.

Ingredients:

  • sugar – 1 teaspoon.

Preparation:

Ground Carte Noir is produced in a very fine grind - this makes it possible to prepare an aromatic drink in a cup.

Ingredients:

  • ground coffee Carte Noir – 2 teaspoons;
  • boiling water – 160 ml;
  • sugar - optional;
  • milk - optional.

Preparation:

  1. The first step is to warm up the cup in which the drink will be brewed. To do this, pour boiling water and leave for a few minutes.
  2. Drain the liquid and add coffee. Pour boiling water over and cover with a saucer. Hold for three minutes.
  3. After this, stir and add sugar and milk to the drink if desired.

Methods for producing instant coffee

The whole essence of making instant coffee comes down to the following technological processes:

  1. Roasting green coffee beans;
  2. Grinding roasted coffee;
  3. Treatment of ground coffee with hot water, or extraction, i.e. brewing coffee.

These stages of the technological process are similar to how coffee is prepared at home, only this happens on an industrial scale. Next, the resulting coffee extract is filtered, separated from the grounds, and dried. That is, the last stage of the technological process is drying, which determines the type of instant coffee obtained. Thus, it can be of the following types:

  • powder. This coffee is produced using spray dry technology, “spray drying”. The coffee extract is sprayed into a stream of very hot air and dries into a powder;
  • granulated. This type of coffee is produced from powdered coffee, which is made by spray drying, adding another step to the technological process - aggregation, which, in essence, is the wetting of coffee powder to form granules. Such granules then, during storage of the finished product, can again disintegrate and turn into powder;
  • sublimated. This coffee is produced using freeze dry technology, “freeze drying”. The coffee extract is frozen, then crushed into small crystals, and then dehydrated by sublimation in a vacuum. After the water evaporates, the dry extract retains its crystal form, acquiring a caramel color.

This manufacturing method best preserves the flavor and aromatic substances of the coffee extract, but due to the fact that this technology is the most energy- and labor-intensive, freeze-dried instant coffee is more expensive than powdered and granulated coffee.
